    Sometimes I feel that the normals are close to catching up to Ben in terms of cooking skills, then Ben pulls something like this out of the bag just to remind us why he's the one wearing the jacket.

    I think Ben really removed an obstacle with leftover bits by reminding everyone: You don't have to throw your leftovers at once dish, and they don't have to be a meal. You can make smaller snack like things like the vodka fish

      And it's good to remember, like Ben alluded to at the end, almost everything you have leftover can be bagged up and put in the freezer. Especially the bits and pieces of greens, just keep a supply and whack em into a blender for use with sauces and the like. If you're gonna blend, who cares if they might be a little freezer damaged.

      Freezing leftover/"trash" bits is good idea; I did something similar when I wanted to try make ramen stock - eat whole grilled chicken few times & save the bones etc. (might have even frozen them, was a while ago), same with bone-in cuts of pork & beef. Finally made the stock when I roasted lamb, and then used all the accumulated bones & "off-bits" that gives the stock the collagen's fatty umph you just can't get from stock cubes.
      iirc after 12 hours boiling, draining and putting through cheese cloth it was pretty much perfect home made ramen stock. And all it needed to make was keep the leftover bits & bones.

      @@KhronicD Exactly, loved that extra tip at the end, because, for example, while two fishcakes would actually be perfect as a single person appetizer, just planting that idea in your head of, hey, I can take my time, freeze it for later, and maybe I can make something extra later, seems obvious sometimes, but often we just forget or are so not used to this way of cooking (everything needs to be made now, no instant gratification of a full meal etc.) This was a really great video to unlock creativity for people, because it's certainly not the norm right now for people to work with scraps, it kind of takes a different angle of approach to see a different picture essentially.

      He does make a good point but the way I cook feels even easier - I just never have scraps. As long as it won't change the flavor or massively change the nutritional value of the meal, I just add what I have (ex: adding the whole cucumber, all of the cauliflower, etc). If I have extras of other stuff like chicken I freeze it before cooking so I have frozen, raw, unseasoned chicken instead of having to match the flavor of seasoned chicken scraps to a new meal. Maybe it's just me but seems easier than having to remember I have a bag with a paltry amount of frozen scraps in it that needs to have things added to it before I can use it.

      We rarely see just how good Ben is but this video showed a glimpse of his quality! He constantly adapted to new challenges already being restricted by a troublesome task and effortlessly used the available resources that were individually celebrated with a cheffy touch stepping a level above a normal’s contribution

    Imagine this but combined with the Pass It On format! Mike, Barry, and Jamie have to do a pass it on dish of their own, then Ben and Kush have to come in and do their own Pass It On with the leftovers from the normals.

      Nothing would be on the plate 😂😂 nobody would use an ingredient because they wouldn’t want to confine the people after them with using the remnants of their selected ingredient 😂 if we’re lucky we might get a cabbage served up 😂

    I like that Ben still managed to make the neatest possible plates with very random things. You can tell he's a chef because making food from scraps is something that happens a lot in professional kitchens to feed the crew.

    I would love to see Ben on Masterchef The Professionals. I feel like he’d own it. He’s calm in front of a camera, confident in skills, deals well with distracting presenters, and as seen here would be amazing at leftover or mystery box challenges!

    Ben's sweating, but this is something he's definitely familiar with as a chef, even if he dislikes the chaos. You know the kitchen likes you when the grouchy chef slams a plate of snacky scraps into you, grunting "eat".

    I think it would be very interesting to have a video where both the normals and the chefs where presented with multiple dishes to plate, to see the difference in thinking. It would also be nice to have some tips for plating in the video aswell :)

    Ooh this is gonna be interesting!
    Due to a bunch of historical reasons, cooking with scraps has been elevated to an artform in my culture! I actually prefer the scraps to the main ingredients for some stuff! I'm looking forward to seeing what Ebbers comes up with.

    I have noticed a shift in tone since things shifted sides for observers. Never is it more obvious with Ebbers embracing this challenge. There feels like less structure, more see what happens. It feels like a dude in industry has a day off to play. It is so very wonderful!

    I always appreciate the "on the spot" made up recipies like what Ben did here. At the end of the day, im not thinkong for 2 hours how I can make all my scaps into one cohesive dish. Im just trying to use as much as I can without tooooooo much effort. This gives me reasonable ideas instead of just one very specific recipe no one will ever repeat.

      That's what I do when I'm just cooking for myself. I have a look at the fridge and freezer, see what needs to be used and somehow put the things together into a dish. Very little gets wasted that way. I hardly ever follow recipes to the letter but you get good ideas from watching cooking shows and this one has the added benefit of being so very entertaining.

    Wow. WOW. This video is the best one you've ever done. Ebber's disquiet at the start being chucked in the deep end and then Barry's cockiness being brought down a peg or two by the end. Just an amazing finish for Ebbers with all those amazing looking dishes. You should truly challenge Ben again like this. It was incredible to watch him think his way through what the hell he could pull out of his hat. Go Ebbers go! Hilarious, amazing, and delightful video this one!

    I *love* this format and would love to see more of them! This is totally a thing I’m trying to do more of lately. I recently figured out that I can save my apple cores and turn them into a nice syrup/jelly for pancakes. Makes the place smell amazing too :)

      Yes let each of normals cook a dish that one of the chefs will create from the other 2 chefs. Then flip it and let normals create from scraps.

    Hey guys! I absolutely love this format so much. I love how annoyed ebbers gets at the waste, I love how the normals just use elements for a specific recipe and discard the rest (let us all be honest, this is us) and I absolutely love the banter, what a freaking fun episode, on my second watch! Also...please please continue to force ebbers to do things without a plan!!

    I loved this! Everyone was on their A-game today, the peanut gallery was sassy, Ben showed that he really is a phenomenal chef, (like, seriously, he's as good as James, Kush, etc..., he just loves a casual cook!) It had everything!
    I would love to see this be a next staple alongside Pass It On. There's actually a lot of potential to this, especially if you do twist it into a competition style vid, rather than a tough challenge for the chefs.

    Cauliflower stalks(the one with the leaves ,not the main stem) are pretty good addition to 'Aloo posto', a Bengali dish. They retain some bite and little bit of the cauliflower flavour when cooked down.

    Ben's dishes genuinely sounded so good. Always impressed with his ideas but blown away by this episode. Will definitely use some of those with my left over cauliflower (I always just use the whole thing in the same dish to avoid waste but those sound better!)

    This was a bangin episode. So many hilarious moments…fantastic food and camaraderie. I felt bad for poor Ben on the sidelines at first, looking like he was having a little meltdown internally but he really showed why he’s the chef and the boys are the normals, regardless of how good the boys are these days.

    Poor Barry xD I love their dynamic. Truly entertaining and enjoyable to watch, I have been for years, and its not even because of the amazing food anymore. It feels like just chilling out with a bunch of friends! Well done guys.

    Cooking runs in my family, my mother had my sister and I in the kitchen from an early age and taught us all the basics.
    My sister is a chef now and I am a very competent home cook.
    However, I think it is only in the last 18 months that I discovered how tasty cauliflower stalks and leaves are.
    Found a curry recipe in the Co-op food magazine that included them. I can't believe I'd been throwing them away my whole life.
