i think it's the problem of "capacity creates need". if they didn't have 324082304 pots and pans available to use, they'd just rinse one out and reuse it, but as it is they just use a clean one, thinking "dishes are a problem for future me" (or in this case, whoever the poor person is who has to clear the set after shoots)

As someone with a disability, it's very hard for me to make something that you have to constantly watch, mess with, or baby. Anything I can do where I do the bulk of the work in one go and then let it be, I'm all for. On my good days, I do love to cook fancier, more involved dishes (mac and cheese, lasagna, frittata, etc.) but most of the time it's either something you can do quickly, or something you can set and forget.

The lime tip is great; Ben's suggestion to cut through the diameter instead of the poles *seems* obvious to me, but some might go long-ways, thinking that exposing more surface area is better. It's like an orange, though - there are segments and partitions, so you need to cut them all to get the juice.

With all those ingredients (except the beef, I'm vegetarian) I would have made a great coconut milk pulao or pilaf with some paneer for the protein, and a Raita with the avocado, coriander and lime, chilli and sour cream. It shows off what your Packs App is really capable of. As a "challenge" though, I think it'd be more fair if Ben also was kept in the dark as to what the ingredients were so he couldn't start thinking in advance, because it's not really a "challenge" of Chef vs Normals is it? I loved how Ben cleaned as he went and used minimal equipment and pots/pans. My best kitchen hack is to wash, dry and put away my knives as soon as I'm done with them; and if possible to clean the fry pan or any cast iron cookware before eating (if it's not still full of food). It only takes a minute or two and they can go back in the still-hot oven, or on a still-warm element, to dry off from the residual heat. Getting some of the big pots or pans out of the way quickly really reduces the mental load of the cleaning up after you've eaten.

Id say, even midweek, rinsing and soaking basmati before you leave for work, so you have soaked rice when you get back, will get you much better texture and portion size for the same amount of grains in the evening. Also, basmati just tastes better soaked and rinsed, the surface starch is usually badly oxidised and goes slimy in the water.

    • @felikso

I'm vegetarian + don't cook with dairy, and have the meals packs app: half the packs you can pick from each week are vegetarian (ie: three), and I always feel like I have a decent amount of choice. That's veggie though, not vegan, so a lot of those recipes do have eggs / dairy etc. in them, but- of those I've been able to select recipes I like that either lack dairy, or it's easy enough to just leave it out or sub it for something. The meal packs also have a "recommended twists" section at the bottom, which sometimes offer advice on how to make something vegan. I don't use the app too often though, so if you're looking for more regular vegan recipes, you might feel a little let down. But I'd say it'd definitely be worth trying out the free month trial, and seeing what you're able to make of the veggie packs!
