Mike looked so gleeful when sharing what he thought were the worst scraps possible, but Ben really turned them into something beautiful looking and tasting. It's really a testament to Mike's cooking that he was able to make a really fancy dish with such little wastage. He did a great job! I did laugh at 13:19 cuz Mike knows us so well, it's not that we don't care about it, it's just exciting to see what the scraps turned into. Also, it's normally Mike who's really hard on himself, but so is Ben. Mike was praising that omelette to high heaven and Ben just went it's fine, the color's too dark for an omelette.🥺 He served up really delicious dishes out of some very difficult scraps. Ben you did so good!
Honestly, the omelette (if we forget that it was cold by the time they ate it) looked absolutely fantastic. Sure, it had color, but good luck making your paprika-colored butter turn out a bright yellow omelette. The color was flavor!

I dated a chef once and it was pure joy watching him throw things together somewhat randomly and come out incredible. This is definitely joyful to watch the talent and creativity. Thank you
Broccoli stalks are just so delicious when they are peeled. Great for stir-fry or scrambled eggs. So good that Ben had an opportunity to show more chef skills. ❤

I love scrap challenges! Please do more of those, they are so creative. Also battling food waste is something we all should strife for. Personally I love cooking with scraps and leftovers. And if nothing else helps ... make a good stock from scraps and freeze it.
I love this - so much can be done with some scraps, especially if you know how - I often make soups from broccoli and cauliflower stalks (or even brussel sprout stalks, if you can buy them fresh on the stalk). I would not have thought about scallop butter, but I've done similar with shrimp heads and oil for a finishing drizzle. I'd love to see this done in a dessert format too - so many cakes call for just the whites of eggs, for example - watching Ben using the leftover yolks to do curds or other things would be fun.
I’d love to see you guys do a “old school dinner meals” battle with dishes such as doing chocolate concrete with pink custard, cornflake tart, turkey twizzlers with potato smiley faces etc - it would be absolutely amazing if you could. Love you guys ☺️
@@TsukiKatanachocolate concrete is like shortbread but made with cocoa powder, cornflake tart is pastry with a layer of jam and then cornflakes mixed with golden syrup, brown sugar and butter on top, then turkey twizzlers are like turkey breasts that’s breaded and cut into like a spiral shape. Hope that helps ☺️
We always use up the leftover egg from the panée (or panír in my language). We mix in some of the flour until we get a still kind of runny, but somewhat firmed up "dough". Add some salt and scoop tablespoon sized dollops into the hot oil and fry them until they are golden brown. My mother calls them "Clouds" as they float on the oil when frying like donuts and they take all kinds of shapes because of the runny nature of the dough. They are perfect little after work snack for the chef or anyone who wonders into the kitchen but does not allowed to snack on the meat we were originally frying :D
If you guys keep making videos like this it may quickly become a favorite series. Preaching about lowering food waste is a wonderful thing, but seeing how to actually implement it is even better. Especially with really commonly used things such as the broccoli stalks. I personally always get the long stalky broccoli when I buy it just because I always use the stalks to make soup.

I love all of this so much. I don't get to cook with imagination right now because I have kids, ages 2 and 4. Watching these videos helps keep my brain engaged with food flavor ideas. And now I want scallops.

I’m allergic to shellfish so I’ve never had scallops, I’ve never wanted to even try them but the ones Mike made looked so good I’d chance eating them lol.
I wanna see one (or two) of these with Kush and Ebbers.. I get the feeling when Kush cooks first he will do his best to stitch up Ebbers and leave him with the WORST ingredients, whereas if Ben goes first he will more work with Kush to both produce greatness!
I think making the normals use Ben's scraps would be awesome. Maybe Ben makes an app, main, side, and dessert, then the normals need to use his scraps to make one dish.

I think Moke did well on this episode. He was calm and joyful. Ben had some great ideas, even if the omelette wasn't spectacular, it sure seemed great to the palate.🎉
If I had the skills Ben has, I would have combined the flour and eggs from the panne to make crepes, then dice the broccoli stems, cook them off, cook the roe in the panko and fry, and use the roe, broccoli, and cheese as the filling.

And a chef, who had to make a three course dish out of it. I loved that show. It was so creativ. I wonder why there has never been a remake, after cooking shows came up. Ist was called "Küchenduell" (Kitchen Duell). That was really fun and interresting.

Garlic + oil = aioli, so any mayo w/ garlic is also an aioli. In the US, I’ve never seen an aioli w/o egg, so it’s always been a garlic mayo (w/ maybe other flavors).
