An artist who critiques his work, there may have been some air gaps , his words that’s my edit. I did not know how much work goes into his crafted deli meats, wow a master at work.

I like this guy. I’m a cheese, lettuce and ketchup guy. Less is more on a burger. But I could do everyday just a cheeseburger. Nothing else.
The stock makes a tremendous difference if you want to reduce it to make a sauce. You can however help yourself out with some gelatin sheets so you can at least "fake" the nice velvety consistency of a demi glace style sauce
