    I never knew the skin was edible, I've always sliced these to 1/2 Bowls and brushed the inside with Maple Syrup and then cut a tablespoon of butter to add for the last 2 minutes of cooking, we always scraped out all the flesh and left the skin...this new info could really change stuff up. THANX

    Thanks for showing in details everything I needed to know about cutting and baking the squash. I love acorn squash since it's the closest type of squash to one we have in South America that doesn't exist here in the US. I used to just cook it whole in the pressure cooker since I never wanted to attempt to cut it. But today I wanted to try it baked. None of the other videos I'd seen showed any useful information about how to cut, or make it with (toppings) as much as you did! I absolutely love squash! Mine cooked in just 35 min!

    I’m a big fan who lives in a small town in Northern Wisconsin. Many of the stores and brands you mention are not available to me here. But, you explain the qualities of the ingredients so well that I can generally find something that works as well. You also give plenty of latitude for folks to tweak your recipes as we need or want. And there’s always online shopping! 😁👍

    Thank you for these recipes I just harvested like 40 of these babies and usually we just freeze them for stir fries and such but I’m going to make these :). Another good way to use them up is deep fried in tempura batter :)

    I'm actually using the half-moon version with Mascarpone,and tthey're
    prepped, oven heating up and Mascarpone cheese is the way to go for me, thanks for the recipe I subscribed jusf after watching this channel 1st time.

    Ok just have to say love this channel and all recipes so far! But I must say - I cut up and roast butternut squash with the skins on and it is delicious but must peel for all other recipes. Thank you for a great channel.

    I love acorn Squash! Well I am 52 and never cooked one before. I have been looking at the 2 I bought a week ago and today I figured they can't just be a holiday decoration! Thanks for this video! I now feel like I can jump in and get to eat my squash!

    I’m 62 and tasted my first actor squash yesterday. I kept it simple. Wasn’t really sure what I was doing.🤣 Roasted in the oven with some. EVOO and salt and pepper. Was delicious.

      I haven't found a way of cooking squash that I like, I keep trying different squashes, I'm still holding out hope! I don't want to waste ingredients incase it ruins everything, so this will be the way to go.

    I know this is an old video but I was searching for an acorn squash recipe today so here we are LOL. anyway - I love acorn squash my mom used to make it often growing up but she only ever made it one way: halves baked in the oven with butter and brown sugar. I love that but I was looking for something savory. I made mine today cut in slices with olive oil, salt, pepper, paprika, a little bit of sweet curry powder, and a whisper of cinnamon - they turned out delicious. Your ricotta and hazelnut one looks SO good and I can't wait to try that one soon. Thank you!

    One of the best things about the acorn squash for us is that it can last from harvest to March of next year no special treatment. I kept mine in the floor joists in my storage pantry in basement. I put up green coated wire and put them on that in between the joists. I had so many we finished the last in March, they do turn orangish yellow. the biggest problem was the freaking squash bugs and bores you have to fight here in C IL. I grew them along the sun facing side of our 3' garden fencing, they trellised on it as we trained it along the fence. My favorite squash by far, cut in half butter/maple or brown sugar is all you need. But you can use them in soups, stuff them and many more recipes.

    You CAN eat the outer skin on a butternut squash if you cook it well enough. I was surprised by that but I followed a Jamie Oliver video for a vegetable casserole where he bakes and uses the entire thing (seeds removed) and it was fantastic.

    You can also boil them for a little bit it helps you cut through them very easily I just had one for dinner … vegan butter coconut sugar and a drizzle of maple 🍁

    I'm baffled at the idea of not eating butternut squash skin. After being cut in half and roasting for an hour, the skin is delightfully papery, like a delicate pastry - almost like croissant skin. I'm not aware of any harmful chemicals or compounds that would present a danger, so I see no reason to deny yourself a tasty and nutritious treat.

    I boil these with brown sugar, refrigerate, and eat them with oat milk. Taste like sweet potato dessert.

      That's great! Hope it works out. I believe I mention that if you're uncomfortable cutting it, throw it in the microwave for a few minutes. That softens the skin, making it far easier to cut.

    I added cinnamon and nutmeg mixture. Also Chinese 5-spice with cinnamon is good. Mix with very light maybe a tablespoon of brown sugar.

      It's completely edible and probably cooks mostly off. I think it could be scrubbed off with a damp towel, but haven't attempted it.

    If I wanted to warm them up before thanksgiving dinner when I get to the house... how would I do that.. pop them in the oven for a couple min?

      Yes you could warm up the pieces, at 325f for about 10 minutes, but I would hold off on the toppings until serving. Otherwise the ricotta would spill out. Enjoy!

      Yes that will work fine. If you have visible dirt, definitely give it a good cleaning. Most acorn squash I've come across is sold precleaned and with an edible wax sealant applied.
