I made this last night. I didn't have cranberries, so I used golden raisins. I omitted the cheese. It was DELICIOUS! I ate half last night and reheated the other half for dinner tonight. It was as good the 2nd day as the first. Definitely adding it to my list of favorites. I agree with other commenters who praised you for encouraging us to us ingredients on hand. Thank you.

I have this on the stove right now, and the acorn squash is roasting. I added mustard greens and a leftover chayote squash to my mix along with green apples. Also tossed in some leftover green onion. The stuffing in the pan is delicious even before I've added the cheese and pecans.
This was so delicious! I also added 1 cup of cooked quinoa to my filling to get a little bit of vegetarian protein to the dish. I ended up with some extra stuffing but that was fine with me because this was soooooo good. Thanks!

Wow, my hubby just bought home 2 acorn squashes. I have never had or tasted, so went online to get a recipe oh my goodness just listening to you I wrote everything down and it sounds heavenly, hubby went fishing and I am off to the kitchen will let you know how it taste.

Looks really good. Have a rosemary shrub in my yard and always have raisins and almonds on hand(and am not wild about cranberries).Probably don't have nutmeg right now so was thinking maybe cinnamon. Anyone try it with those subs?
AnitaCooks I am in Okinawa, Japan (U.S. Military) and all I can find is carnival squash and sweet dumpling squash on base. Will either of these work? I may be able to find something else at a local market. Just wondering

Hello! Both will work. I believe sweet dumpling squash is more similar to acorn squash so that would be a better choice 😀
