Ingredients
2 acorn squash, halved and seeded
olive oil
salt
For the Filling:
5-6 mushrooms, chopped
3-4 tablespoons olive oil
1/2 cup couscous
1/3 cup vegetable or chicken broth
1 bell pepper, diced
3 scallions, thinly sliced
2 garlic cloves, grated
salt, to taste
freshly ground black pepper to taste
4 ounces feta cheese, crumbled
1/4 cup pine nuts, walnuts, or pecans
1/2 teaspoon dried oregano
1 tablespoon or more freshly chopped mint or parsley
2 tablespoons lemon juice
Instructions
Preheat the oven to 400 °F, 200 °C.
Rub both sides of the squash with olive oil. Season the inside of the squash liberally with salt and place cut side down on a baking sheet. Cover with foil and bake until tender. About 45 minutes.
Bring 1/3 cup broth to a boil and add the couscous with a tablespoon of olive oil. Cover and set aside for 5 minutes then fluff the couscous with a fork.
Add the mushrooms with 2-3 tablespoons of olive oil to a pan and cook over medium heat for 5-6 minutes or until golden.
Add the bell peppers and the scallions and cook over medium heat until soft. About 5 minutes. Season with salt.
Place the pine nuts in a pan and toast them until lightly golden over medium-low heat. About 4-5 minutes.
Add the veggies to the couscous along with the remaining stuffing ingredients and mix together. Taste and adjust the seasoning if necessary.
Fill the squash with the filling and bake (uncovered) for 15 minutes.
Serve.

Had to use canned instead of fresh mushrooms, onions, carrots, green bell peppers, quinoa, Parmesan, black walnuts, chopped dates, salt, pepper, red crushed pepper flakes, oregano. The hardest part was waiting the 15 minutes for it to caramelize after tasting my filling! 😂 So yummy!!!! Thank you!!!🎉❤
Thank you for sharing this wonderful recipe with me ❤❤
LEGIT. Definitely, very GOOD. SPEAK. Lady.
I made this, a few times, stuffed with lentils, red onions, pine nuts/pecans, parsley, garlic, olive oil, balsamic vinegar, salt & pepper.... Topped with feta or goat cheese and baked. I have mixed it with couscous and/or rice but a halve is too filling at least to me 💕
What a beautiful presentation. Can't wait to try this.
I love all of your recipes, thanks for posting, χαιρετισματα απο την Γερμανια
I'd love to see the roasted squash seeds. They would be great for snacks, I think. Thanks, Dimitra.
I love this idea! I only had it filled with butter, brown sugar, and pecans before. I am excited to try savory acorn squash next! Kudos! 🙂
I've only had it with butter, salt and pepper. I'm going to try yours AND hers. Lol
Looks delicious! I have a Acorn squash in my fridge....guess what I'm making? Love your channel, you're great!
Hello Dimitra, thank you so much for such a tasty recipe, I have cooked it last night 17 Oct 2023, and it was so delicious and very filling.
I have never used acorn squash before, but after waching this video l'll cook this recipe soon! Thanks a lot!
Tonight's dinner for my Greek dad. Thank you.❤️
They look yummy and so pretty and festive.
Delicious
This looks so good and easy to make. Thank you for sharing!
What a creative idea for squash and the stuffing looks delicious! The possibilities are endless for the stuffing according to your taste. Lots of Thanksgiving tables will have this on it this year! Perfect!
Look delicious. I will make this soon. Thank you
YUM!!!! Can't wait for fall to try this recipe and many others showcasing various squashes. I'm going to add lamb sausage and rice in the stuffing as well, to give the dish more substance as a main dish. Thanks for another great recipe, Dimitra! 😀
I always roast the seeds, great snack.
That was excellent and your confident presentation on camera really made a difference. Such a yummy recipe which I will definitely include this summer when I have the family over for a party in the garden
Thanks for watching
Looks delicious! Thank you for showing us how to make this! 😋
Dimitra, you do pronounce the T in the word soften.I always do and I googled to be sure!
I've always pronounced it without the 't'.
Another great video and we will be enjoying this tomorrow evening. Reference your comments about pronunciation, one word that grates on a native English speaker is: Herbs not ERBS!
Γεια σου! you are so sweet! very nice recipe thank you! So when I was a kid my mum used to do us bulgur with butternut squash! yummy! so I am sure bulgur will be great in this recipe! also, raisins and pine nuts or almonds I believe will be very nice! :)
I made this today and it was soooo delicious, thank you. The feta cheese made it really savory, it will be a regular, yum.
I'm really loving these ideas for Thanksgiving. Please continue!
Never seen a stuffed acorn squash. Mmmm 🔥
Bravo Dimitra!
New subscriber here! I can’t wait to make this over the weekend! Thank you🍁💕🍂
Thank you. Definitely trying this recipe next time I get acorn squash. I would use pepitas for crunch since pine nuts are so expensive.
Yummy👍😀💜
Dimitra - SO NICE!!! A very versatile filling! Great ideas, wonderful sweet and savory squash - beautiful presentation, too! ~♡~♡~♡~ (As a side note, the "t" is silent in 'often' also) :-)
This recipe looks outstanding. I've never eaten an acorn squash before I can't wait to try it.
InstaBlaster...
I just made these but you should see my kitchen! Lol couscous everywhere! DELICIOUS! followed your recipe.
This looks so delish. I must try it
TY sweet Dimitroula mou! I first boil a pot of water first I boil any hard veggies such as a whole acorn squash, whole butternut squash , etc for 10 minutes in boiling water with some salt because it's easier for me to cut them After I take them to cool it off, then I cut them in half.. Then I go and roast them because I like them to be nice, soft, and tender. I'm gonna make this recipe since I have those ingredients sitting in my fridge. Stay safe!
Great idea, Tanya 😘
@@DimitrasDishes You're welcome.. If you can do roasted seeds, that'll be great Stay safe
Looks great thank you
Looks delish!
Going to make it
Rápido,prático e delicioso!!! Para o verão é uma ótima opção! Grata
Looks so yummy!!
Put the squash in the microwave before you cut it. It makes it so much easier.
Delicious!!!!
I just want you to know that the link to your website is on my homepage. You are the only private website, on there. I enjoy and make a lot of your recipes. Thank you!
Yes! Thank you!
Υασου Δημήτρουλα μας.. 😊👍
Yummy
Yes show us how you roast your seeds
Yummy!
This won’t make it to my thanksgiving table. I have an acorn squash on the counter, and I’m only cooking for one. It will be a side for my lamb chops tonight 😊
pineapple and spinach goes well with it
Mushrooms will only get gummy if washed and put aside for a long time. If used right away there is no change to their texture.
Why didn't you use the mushroom stalks!
Nice video. Just subscribed
I'd like to know how to roast pumpkin seeds
This doesn’t come up in your videos, but the “l” in the word caulk is silent also. Love your cooking!
lol!!
Lol..its ok. I had mentioned it once in the comments as well. My friend still pronounces the C in scenario...and I won't even mention how many of my friends butcher the word quinoa. Dont have the heart to correct thrm. Lol.
Soften often.
Option is to save the seeds for planting/gardening.
Your pronunciation is perfect! The 'T' in soften IS pronounced according to the Cambridge English dictionary. If it is silenced, it's an American English slur. Lazy speech! Love your videos.
It's not pronounced in Australian English too.
It's perfectly ok to pronounce the "T" in soften. Many English people in England do just that... 😉
👏🏻👍
I just thought that Dimitra was pronouncing “soften” the way it’s pronounced wherever she grew up. I didn’t mind. We all have our quirky pronunciations from family or our regions.
The pronunciation depends on the region you are from and it is in poor taste to correct someone in that manner. Your pronunciation is clear.
Do you eat the skin or discard it?
I don't eat the skin.
Put the skin in your garden as compost.
Can you make it with meat
Yes, of course. You can add some ground meat to the filling :)
Do you eat outer skin?
Also cut a thin slice off the back of your squash and they will sit more level on your pan and dish😂😎
Holly molly~
I’ve been pronouncing “t” in soften, too.
Yes, its silent.. Makes one wonder why it's even there...lol..

Please don't waste any of those precious mushrooms - the stems, when washed, are just as tasty as the tops!
i notice you have not used the mushrom stalks. a bit wasteful.
Wondering why it's the right way of draining the onion by lifting them out of water into collander !!!! Hmmmmm !!!
