    After reading many of the comments here I have to weigh in. I've worked with many an old school chef just like this man. Their food was delicious and no one ever ever got sick.. on a whole we are too antiseptic. Have a look at someone wearing gloves and pay attention to how many of them go from handling money or cleaning and then back to the food. The glove gives a false sense of security to the wearer. NOTHING beats teaching someone how to properly wash their hands. The health industry has been ramping up their rules but not so much for the cook at the end of the line but because of the unsafe food handling procedures used at the big corporate farms or slaughter house. One mistake at a large facility can get hundreds of people sick. As a nation I think we were better off years ago when livestock and produce were handled more at a local level with smaller farmers more in touch with their products. What this man is doing in his kitchen is no worse than most of our mom's did in their own kitchens. Actually most home kitchens are far less safe than any commercial kitchen.

    • @brandonbauder3440
      @brandonbauder3440 4 года назад +2

      Very true, he still touches raw meat,the handle,his wiping towel and then other contact surfaces. During a rush,those are the mistakes that allow dangerous bacterias to grow. That's a great way to give someone hepatitis b. Society definitely has gone insane but these are habits that clean chefs dont have. If he's that lax during a fun video,imagine when it's busy and he has to move?

Get over your bad-self.

      i have refrained from commenting about this channel's disgusting lack of hygiene and the absolutely shit-looking appearance that the food has out of respect, quite honestly i wouldnt feed any of this shit to anyone not even a convict and if i saw a chef soaking his finger in the food to taste it id just leave and never set foot in that restaurant again
      i worked in a restaurant for YEARS and am experienced enough to the point where i have been a chef specialized in meat and pasta dishes for about 3-4 years now, that said your comment was so full of shit that i had to comment and let it all out
      it is no exaggeration to say this stuff is absolutely disgusting especially to hygiene-sensitive people who expect their food to be clear of random bacteria, that restaurant wouldnt even be allowed to remain open where i live because its hygiene standards are nearly non-existent at this point and even the government would judge disgusting and inappropriate the complete disregard for the consumer thats going to eat the food
      only reason im even here is im curious
      you are stunningly full of shit if you claim that actual experienced cooks shouldnt be disgusted by such a kitchen and such lack of hygiene (especially since its coming from the chef himself)

    So sorry to hear that Daddy Jack passed away. I loved this video. He made this dish look as easy and uncomplicated as when I saw Marco Pierre White make this on You Tube. There you are, Daddy Jack, you can talk to MPW when he finally gets up there ! Only a few chefs can make things simple for us home cooks. They look like they're going slow, but everything is in perfect sync. God bless you, chef, from Australia (New subscriber).
