Let me know your thoughts on Sunday's Ideals or if you want to add on to or disagree with what I said.

The main issue with Sunday is that he simply overlooks an extremely important flaw in his plan. Something that you actually mention here:
*Choice.*
In many ways, I agree with his philosophy, but he does not intend to give anyone the choice as to whether or not they want to participate in his philosophy in the first place - nor does he intend to offer a way out for those who might change their mind in the future.
Also, usurping one dreamscape and replacing it with another is also another way that Sunday eliminates all choice - what if people preferred the old dreamscape? If he had just, for example, allowed both dreamscapes to co-exist and gave people the option to travel between them (or leave at will), it would have been easier to sell his own dreamscape of Order as the far superior option. But by taking the approach that he does in-game, he essentially removes any point of comparison, too. "It's my way or the highway" kind of thinking.
I did say this at one point in the stream. I just didn't clip it. I said "It all comes down to choice, and I think as long as people have a choice, there is nothing wrong with Sunday's plan. Including the part about being controlled." (Paraphrased). So yes, I agree with everything you said, but I just couldn't put that in the video because I didn't clip it.
Main problem with Sunday's ideals in that he's imposing Harmony through absolute Order. Even if his intentions are good, its done through the expense of free will.
You have to remember that none of the crew were opposed to the idea of people living in the dreamscape, even if they didn't agree with it. They even sympathised with some of his concerns. They only started challenging him soon after he started imposing his ideals on everyone. You are put in this blissful dream without a say in the matter.
It all comes down to choice imo. I said this in the stream (couldn't add in this video because I didn't clip it). I said that as long as people have the choice on whether to stay in the dreamscape or reality, there's nothing wrong with this plan.
