Homemade Candied Peanuts (with a kick)

  • In this video I show you how to make candied peanuts at home! I kick this up with the addition of chili. You can use cayenne, Kashmiri or any kind of chili you like. This is a super easy and fast recipe that can be adapted to any kind of nuts you want including walnuts, pecans, almonds, cashews, etc. as long as they are raw. This is my go to snack when I crave something sweet and salty and spicy.
    Ingredients:
    1 cup sugar
    1/3 cup water
    2 cups raw peanuts
    1/2 tsp salt
    1/2 tsp chili powder (cayenne, Kashmiri, etc.)
    In a heavy bottomed pan, heat sugar, water and peanuts to boiling. Stir for 3-4 minutes until the syrup crystallized. Keep stirring as the sugar begins to melt and caramelize. Near the end, add the salt and chili. Pour out onto a baking sheet and allow to cool completely. Enjoy!

    Hey Greg! Candy making is so fascinating, you've got to wonder how people figured out how different techniques would work for different applications. I'm sure a lot of burnt happened before figuring out what works! These sound perfect. I also love salty, sweet and spicy! I've done a similar thing with pecans but to make it slightly easier I used maple syrup instead of sugar water. But... You don't get that crunch layer your sugared peanuts got! Thanks for showing this technique! I love learning new things. 😊

      Hi Amanda. Thanks. Anything brittle with nuts speaks to me! I have to admit I sometimes go down the RUclips rabbit trail of candy videos. I’m fascinated with manipulating sugar but haven’t tried to do it myself yet.

    Wow! Will have to try this this weekend! If I was to use chipotle powder should I reduce the quantity?
    Also, is the "skin" of the peanuts removed? It does not seem so from the video, but just want to make sure.
    By the way, it's always a pleasure to watch your videos. Thank you for sharing all of these recipes and your knowledge. You do come across as a genuine nice person and it feels good to watch your channel.

      Thanks so much for your kind comments. Yes, I think I would reduce the amount of cayenne to no more than 1/4 tsp. You don't want the spice to overwhelm the flavor. No need to remove the skins for this one. They caramelize up just fine with the skins on. I really hate peeling peanuts!
