I live in San Jose and honestly it is getting so so so expensive to live here and I can't afford it. I am renting a room with a family and I am paying $1,200 a month and that is actually cheap now. If I want to rent 1 bedroom apartment, they run up to $3,500 a month in a decent area and as low as $1,800 a month in a not so decent area. I am dying to visit Cyprus, I remember there was a restaurant on the main street going to H.T.I right off of PENDELIS Street where I lived, they had KLEFTICO, but I couldn't afford it, at that time all I could afford was a SOUVLAKI for 50 Pens in a decent size Pita Bread, but Kleftico was served in a plate and it was (if I remember correctly) 30£ - 40£ and so I could NEVER buy it, but one time I had a visitor and he wanted to try it and I took him there and he offered me a bite and ohhhhhh my LORD, it was the MOST aMMMaaaZZZiiiNNNggg thing I have ever had, so juicy and sooooooo DELICIOUS. I also remember when I went to the beach in Limasol, there was this burger joint called AMERICAN BURGERS, I was like, OK I am going to buy one and believe me, it was a bite from Heaven, the most juicy and super super super yummy burger, to this day, 40 years later, I have not had anything close to it, I am dying to eat it again, but I cannot even remember where the restaurant was and most likely they're not even there anymore. The super sad part is I have tried Hundreds of burgers in USA, but nothing comes even 1% as good as that. I've even had $30 burger and honest to God, I can make it better hahahahaha, my wish is to eat Kleftico and THAT Burger before I die hahahahaha. That should tell you how much I love food hahahaha. There is a French Chef Hubert Keller who makes a burger for $5,000 and he uses the most expensive Meat and ingredients and gives you a bottle of Wine with it, but I am NOT paying 4 months of my rent for 1 Burger hahahahahaha.

There is a technique that goes into it and if not done correctly the koupes may burst while frying if oil isnt hot enough. Another tricky thing is getting the dough thin enough so when you fry it isnt cooked on outside and raw on inside. Just want you to successfully make these! Good luck and let me know how it goes. Perhaps I’ll make another video in the future on this in a little more detail. ❤️

I would like to try this recipe, but I wonder if you couldn't use the dough hook to knead the dough and put the corse bulgar in the food processor to make it fine.
Virginia Hoffman i dont see why you wouldnt be able to put it on the dough hook. Just keep in mind that this will not hAve the texture of regular dough. Also you can always get the right kind of bulgar from the store so you can skip the step with the food processor. I haven’t tried it but sounds like it would work. Make sure that before frying , the dough is as thin as you can get it. If you shape the dough too thick they will be raw on the inside after frying. Hope this helps!!! ❤️
Amanda Ashby hey!! This traditionally is only made with bulgur wheat! I dont think it would work with corn flour but feel free to experiment. I know a lot of people would actually like a gluten free version if this recipe. Let me see what i can come up with and Ill get back to you. ❤️🌱🌱🌱

Dont forget before u fill your kouba with veggies, make sure the dough is as thin as u can get it on your finger otherwise if the dough is shaped too thick, it will fry on the outside but on the inside it will be raw. I think I know which white sauce you're referring to, EvilKitty64, but I think all Kitties are evil lol. Anyway, so it's a mix of a Dozen or more fresh cloves of Garlic emulsified with the most basic corn or canola oil. You need to use super high speed hand blender & add the oil very slowly on the Garlic & run for 1 - 2 minutes or until you reach the desired viscosity. Oh DARN, I almost forgot to mention 1 teaspoon of Lime juice BEFORE you start adding the oil. That mix was the best kept secret for decades, no chef would reveal it. I discovered it last year & have been DYING to get it for 40 years. Enjoy Evil Kitty!!!
Actually it’s not just Lebanese. Kibbeh comes from Levantine cuisine which is all of Eastern Mediterranean. There’s different versions of it in Cyprus, Lebanon, Jordan, Israel, Palestine, Syria and other countries. It’s technically a street food of many countries with a slightly different name.
Soutsos hey im so sorry to hear that! This recipe is not an easy one. Let’s see what could have gone wrong. Was the oil hot enough and also how thin did you make the koupes. Too thin? I know it takes alot of time to make these, so I understand how disappointed you must be! I’ve made these many times and they never crumbled on me but again this is a tough recipe.
Mine turned out well. I even used the regular sized bulgar but I blitzed the rehydrated bulgar wheat in a food processor to make it more like a dough and less crumbly. I only fried a few of them at a time in saucepot. I made too much bulgar so I made tabbouleh salad with the rest to have on the side lol. They only fell apart a tiny bit as I ate them.
You can get standard Bulgar wheat and run it through a coffee grinder to make it fine. However, I don't think you can honestly call these "Traditional" Koupes without the ground pork and adding Garam Masala???? No. Please stop calling it "Traditional".

Soutsos the oil needs to be extremely hot for it not to fall apart otherwise the koupa will absorb the oil and crumble
