enjoyed as a snack or as part of a selection of appetizers.

Ingredients below
“KOUPES” - GROUND WHEAT PASTE STUFFED
WITH SPICED MINCED MEAT
For the dough
2 glasses ground wheat for “Koupes”
2 glasses boiling water
2 tablespoons vegetable oil
1/4 cup onion, coarsely grated
1/2 teaspoon ground cinnamon
1/2 teaspoon ground black pepper
1/2 teaspoon salt
2 tablespoons plain flour
For the filling
300 g minced pork
2 glasses onions, finely chopped
5 tablespoons vegetable oil
1/2 cup parsley, finely chopped
1/2 teaspoon ground cinnamon
1/2 teaspoon ground black pepper
1/2 teaspoon salt
It makes 24 “Koupes”
"ΚΟΥΠΕΣ" - παρακάτω συστατικά
Για τη ζύμη
2 ποτήρια αλεσμένο πουργούρι για "ΚΟΥΠΕΣ"
2 ποτήρια βραστό νερό
2 κουταλιές της σούπας φυτικό λάδι
1/4 φλιτζάνι κρεμμύδι, χοντροκομμένα τριμμένο
1/2 κουταλάκι του γλυκού κανέλα
1/2 κουταλάκι του γλυκού τριμμένο μαύρο πιπέρι
1/2 κουταλάκι του γλυκού αλάτι
2 κουταλιές της σούπας αλεύρι
Για τη γέμιση
300 g χοιρινό κιμά
2 ποτήρια κρεμμύδια, ψιλοκομμένα
5 κουταλιές της σούπας φυτικό λάδι
1/2 κούπα μαϊντανό, ψιλοκομμένο
1/2 κουταλάκι του γλυκού κανέλα
1/2 κουταλάκι του γλυκού τριμμένο μαύρο πιπέρι
1/2 κουταλάκι του γλυκού αλάτι
Κάνει 24 "ΚΟΥΠΕΣ"
KIBE GREGO - INGREDIENTES ABAIXO
Para a massa
2 copos de trigo moído para "KIBES"
2 copos de água fervente
2 colheres de sopa de óleo vegetal
1/4 xícara de cebola, ralado grosseiramente
1/2 colher de chá de canela em pó
1/2 colher de chá de pimenta preta moída
1/2 colher de chá de sal
2 colheres de farinha de trigo
Para o enchimento
300 g de carne de porco
2 copos de cebola, finamente picado
5 colheres de sopa de óleo vegetal
1/2 xícara de salsa, finamente picado
1/2 colher de chá de canela em pó
1/2 colher de chá de pimenta preta moída
1/2 colher de chá de sal
Faz 24 "Kibes"

Dear Stavros, thank you for this receipe. Today I made koupes by myself. Kids are very happy, me too. Taste of Cyprus at my home. Thank you very much for your work by populating of best cousine in the world!
When I made koupes few times I've found that the taste is the same but consistance is different. The bulguri wheat ahich we have in Russia is a different. It cut twice bigger then in Cyprus. But in any case it is very tasty! Thank you very much again for the reciepe!

You reminded me with my life in Cyprus back in the 80's, I was a college student and didn't have any money and I used to save a couple of Pounds to eat Koupes and Shaftaaliaa. I have so many dreams to go back to Cyprus and believe me I will eat these every day. I never had money to by Kleftico, but I tried just one bite from my friend one time and it was the MOST DELICIOUS Meat Ive ever had and to this day, 40 years later, I still have not tasted anything like it. I hope one day before I die, I will make enough money to visit Cyprus for a couple of weeks and eat these 3 Foods all over again. God bless you manamoo.

I can relate and sympathise with you. Times were very hard, the people were starving as we were in those days. I don't ever remember having a decent
meal, not until we came to England. Since then our lives have improved through to hard work, having 2 or 3 jobs on the go. I do hope you can achieve your goal
to have a holiday in Cyprus. You are still very young! If it wasn't for this dreadful
corona virus I would also like to visit my elderly mother. Unfortunately it's not

Best koupes recipe/demostration! There was a time I could not even find a written recipe online and now, thankfully, people have started sharing their recipes. I usually put my bulgur dough into a food processor after it soaks but I am going to try your recipe with the kneading. Thanks for sharing!!
"christelize" Thank you for your kind and wonderful comments! I have tried using the food processor and did not work for me! When frying the koupes the bulgur was crumbling. Much better by hand even though is hard work. But very satisfying the same time! Enjoy baking!!!:-)

"Christelize" Very good idea Christelize. I have already frozen some in the passed for special occasion. Deep fried them the next day after defrosting over night, and they tasted even better! Enjoy making them!
