    You could make a Rueben Pot Pie with mashing the potatoes for the top!! I'm going to try that.

    We LOVE this recipe! It makes a lot. For the potatoes, I used a combination of little colored potatoes. I also sautéed both green & purple cabbage, lots of it. The reuben sauce is perfect for these nachos. It is so tasty!!!! I did add a little extra horseradish sauce. You'll want to try this recipe as it's so DELISH! 😋😋

    Love love love this recipe! This is a recipe to try if you haven't already. It's soooooo good!!!! For the potatoes, I used a combination of little colored potatoes. I also sautéed both green & purple cabbage. The reuben sauce is perfect for these nachos. I did add a little extra horseradish sauce. Just FANTASTIC! 😋😋😋

    Really interesting to "shred" the soy curls. Then paprika and beet powder to season and color. Wonderful! Thank you.

    My husband is not vegan but because I am he actually enjoys a lot of vegan foods/ meals that I make and buy 😁 so he likes Reuben sandwiches so I think he would enjoy this❤

    I was skeptical of the corned beef soy curls when I tasted a bit on their own. Then I plated the dish like you showed, and the combination was amazing! More than the sum of its parts.     Looks awesome and I'm sure it's delicious, but I've been searching for a measured blend of the traditional spices .... mustard seeds, coriander, allspice, etc.... that give corn beef it's distinctive flavor, but can't seem to find it. Corned beef was the only meat I ever liked, and trying to replicate the seasonings has been frustrating.

      You can certainly make it another way but to be honest mixing it with all the other ingredients here, the sauce and sauerkraut take the main star roles for how this tastes and for me that’s what a Reuben did. It’s not necessary corned beef on its own.

    Was planning to make this week then realized my husband bought Prepared Horseradish and it has eggs inside! He didn't check the ingredients. I just got pure horseradish on Amazon because the prepared usually has oil, salt in addition to the eggs. Hopefully it still works!

      Pure horseradish works! That is pretty much what our prepared horseradish we make from scratch is.

    Is the beet powder just fir coloring?

      It is, it gives it a pinkish red color. You can just use the paprika if you can’t get a hold of beet powder.

      You can totally swap for a bean such as chickpeas (or use shredded jackfruit)

    Brittney, I know that you follow Dr Greger’s evidence. He has said to avoid high (220+ degrees) dry heat for soy because of the AGE’s that is produced. Your thoughts⁉️🤨 / ❤the recipe & especially the sauce‼️

      I have always heard him say cook it at 250 - anything higher like 300 would make them.

    Which horseradish do you use?

      We make our own / 1 (8 to 10-inch long) piece of horseradish root
      2 Tbsp water, more as needed
      1 Tbsp white vinegar, more as needed
      1 tsp of white miso paste
      Blended in a food processor - this makes around 1/2 cup
