How to Make Passion Fruit Jam from Scratch/Homemade Passion Fruit Jam using Whole Fruit.

- I love Passion Fruit Jam! It is tart and has a Unique Flavor of its own, I can't really compare it to anything. The seeds give it a little crispy texture that is not annoying at all. They look like watermelon seeds but they are light and crisp, not chewy or hard like watermelon seeds.
If you are lucky to have a bunch of local passion fruit like me, this jam is a must! We also make a refreshing Passion Fruit Lemonade and/or Cocktails with the fresh Passion Fruit Pulp. Other wise Jam or freezing the Pulp is the best way to preserve it. The jam is also great on a Charcuterie platter,topped over yogurt,desserts, ice cream or even crackers!
Using the Flesh of the Passion fruit Shell tones down the tartness of the jam and also helps stretch out the jam to a lot more product and even thickens it naturally without Pectin. However if you use too many of the Shells your jam can become bitter or bland. So stick to only using 1/3 to 1/2 of the Passion Fruit Fleshy Part for your jam.

Thanks, we just have our winter harvest in here { subtropical NSW Australia} and are going to follow your process. We should get a proper frame to lift the jars out of the boiling water like you have. That looks like it saves a lot of ouch !
Haha yes😁 the pot I bought already came with the frame. But you can also just take them out one by one with tongs. Or they sell a special tool to remove jars from the hot water♥️ enjoy your jam!!
@@ourvisionfarm2893 Here's a something you may have already come across that is, cutting the passionfruit open with a sharp bread knife. I'm a woodworker so I like to saw things open ;)

Just preference. I'd get a lot less jam at the end after removing seeds and the seeds are super thin/crispy I like them. If they were thicker like watermelon seeds I'd remove them😁

Do you mean the weight of the flesh or the weight of the fruit?
The weight of both the seeded part together with the flesh you scoop out after boiling the shells😊

how long do you book them for?
Hey. I don't have an exact time of how long I cook it for,it's all about testing it for thickness sometimes it takes longer if I cook at a slower temp or you can speed things up by cooking it on high but you have to really sit there and stir it so it doesnt burn the bottom of the pan 😁 when canned they last one year without opening! They last longer but the standard safe zone is one year.

Did people like the jam with the seeds?
Yes that I know of😊 no one gave me bad feedback.
I find that usually people don't like berry jams that have round seeds like blackberry because they get stuck in your teeth. But the passion fruit seed is very different,very light,thin and almost crispy.

If you don't like the seeds you can remove them, you'll end up with a lot less product for sure. I don't mind the seeds, they are very thin and crispy😁
What is the ratio of using honey instead?
I'm not sure about honey. I know honey is sweeter than sugar but for safely canning I don't know the measurements or if it can be done to store for long term. If it's just for you, you can always sweeten to taste and then refrigerate or freeze the jam to make it last longer ☺️
Can I use this same process with a Horned Melon?
I'm not sure on that one, I haven't tried horned melon before but I imagine it's lower in acidity which means you need to add way more lemon juice/sugar to safely can it. I don't think melons in general are safe to preserve. I made watermelon jelly before but I added vinegar and lemon juice to make it extra acidic 😊 Google and see if you can find a recipe from a trust worthy site.

Want to know how many jars to plan?:
I wasn't sure how many jars to prepare, so I calculated at the end, for others who need advice, that you can plan to end up with
21ml / 0,71 ounces of jam, Per p. fruit used.
So 50 fruit would be: 50 x 21 = 1. 05 L or
50 x 0.71 ounce = 36 fluid ounces or 2.3 pounds

Can use molasses or brown sugar
use a breadknife when cutting passionfruits, so much easier :)
