Hotdog appears to be regional. We don't use that sign for hotdog here. Only for sausage as far as I've experienced.
Hotdog, tap dominant pointer finger into palm of other hand like a single hotdog going into a bun.

The hand position for beef is imitating checking doneness of cooked steak; like chefs do :)
