I thought about mixing some higher priced hokkien mees in but there were too many big names that I couldn't fit any of them in. I shall try those in the next season.
This stall has been around in Toa Payoh since the 70s when the single storey old hawker stalls were demolished they moved here. Same area but modern double storey market and hawkers. You’re probably not born yet back then.
My favourite hokkien mee growing up was the stall at Changi Airport Terminal 2 staff canteen. (Easties would know) My whole family will eat it without fail every week. Unfortunately the owner had passed away 😔
3:18 As a connoisseur, I would like to think a good plate of hokkien mee as having 4 flavours actually- 1 cohesive flavour plus the 3 well-represented flavours.. your palate should get to "pick out" and enjoy the distinctly well represented flavour with every mouth of it depending on what your palate is yearning for on the next mouthful. As such, I would rather have 3 well-represented flavours. Having 1 cohesive flavour would be really cloying after a few mouths.

I don't mind having both 3 separate flavours vs 1 cohesive flavour, to me, it sounds like the best of both worlds having two different types to eat for when the mood hits differently. Of course, the problem sounds like eating there itself because their business is too good lol.
Not enough ingredients, too much noodles and the sauce swamp the dish really, the MSG plus prawns head sauce probably made up for it. A little modesty on my part, my prawn noodles look so much better much more ingredients, etc. well you enjoy that's enough.

the consistency here is amazing compared to other stalls... Every plate is almost the same quality. Kudos to the chef.

Hands down my fav hk mee in singapore. i have tried those at golden mile, simon road, nam sing, changi village etc but this one rly takes the cake

There could be a comparison with modern Hokkien Mee, e.g., Chatterbox, Ubin Seafood, Xiao Ya Tou.........

The finale has gotta be Swee Guan! Come Daily is the best wet type, Swee Guan is prob the best overall. Personally i prefer the wet type HKM.
This is one place I always miss because the waiting time was way too long! Will wait patiently for it next time!
