people who say the environment is dirty are ignorant... they have been making their noodles like that for how many of thousands of years? They still have their families make the noodles the same way and everyone is fine. My favorite part is while they are making the noodles you hear an elder talking and making everyone laugh. That is what true family love is made of. That is what true family tradition is like, when every patch is made with love and care.
But the environment IS dirty, you can clearly see that. They're rinsing their noodles in old wooden boxes filled with re-used dirty water, they are storing said noodles in discolored weaved bowls with leaves beneath them, you can see the insects buzzing about The fact that they've been making them like that for a long time doesn't change the fact that their conditions are poor.
I'm not judgmental, and I have a friend from Cambodia. you don't need a granite counter top or not even a sink with a clean big containers like the last one they using with clean water it's enough, been clean have nothing to do with been a little more clean because they sale this product. The reason I mentioned my friend it's because she do volunteer over there from time to time and she claims that the amount of people sick because of the poor conditions of some street food it's crazy.
You guys have no clue what its like to live with no running water, they are using what is available to them. they don't have the luxury of clean tap water. beautiful fresh authentic noodles.
