Made red beans using your recipe, and it was delicious! My wife is from Louisiana, but we live in the UK so we had to substitute one or two ingredients. I used Knorr ham stock cubes instead of chicken stock and real Polish Kiel basa smoked sausage. It worked great!

Drop four sticks of butter into your hot pot and melt completely. Now add your chopped vegetables. Add the Salt, Tony Chachere's, and Cayenne Pepper. Cook on a med/low heat for roughly 50 minutes or until vegetables are very tender. Move most of your vegetables to one side of the pot. Mix in the 1/4 cup of flour. Then add to your pot. Cook for about 15 minutes. Add the crawfish and stir. Now add the 2 cups of hot water, stir, cover, and simmer for 20 minutes. If you feel as though you would like more juice just add a little more water. But taste to see if you need more seasoning. Cook sum rice and Enjoy Dat!

It’s good to have an alternate because sometime you may forget to salt like me but had your heart set on those beans LOL.

Soak your beans for 24-48 hours before and they will come out even creamier. I still like to mash mine too though
