Ya but the eggs should be well washed before you crack them. Otherwise dirt could fall in the bowl.
Using egg shells is a several hundred years old method of measuring.
I use em all of the time..
Vicky, I know that you're going to say that it's all of the lady's talent that makes these videos and you are not in incorrect BUT it's your kindness & sincerity that makes them feel comfortable enough to do this in front of a camera. I really appreciate that.
There was something special about this video, maybe it was the way she sliced her vegetables (like my grandma used to do), or just her sweet way of looking at the camera every time she realized she was being filmed, or the exuberant son but this video is just in one of my top five. I think I've watched almost every single video of yours and still trying to savor a few extra and re-watch several.
That meal looked amazing. I love making Crepes for sweet or savory dishes sometimes just for a quick snack and never in my life would have thought to make a crepe style lasagna for better word for it because I can't remember what it was called.

I loved this too so much. I want to make that. Try layering crepes with sweetened stewed apple, sprinkling of ground almonds and melted butter. 6 layers. Top with melted butter and slivered almonds and cook for about 25 mins in mod oven. Delicious with pouring cream.
This is wonderful nonna cooking at its finest. I love how she measured the crepe batter ingredients...8 eggs, 8 spoonfuls of flour, an egg shell filled 8 times with water. And when assembling, dipping each crepe into an egg wash, & then poking holes into the assembled timballo to add the remaining egg wash. Add to that, an appreciative, loving family around her---we should all be so lucky & blessed. Pasta Grannies YT channel is so much more than cooking recipes; not only showing people who cook, but have mastered the art of living, despite whatever difficult circumstances life has brought them. And judging from all the heartfelt comments on all the videos, so many of us are missing & longing for the human connection of good food & good people in our lives.

Vicky, I found your channel only recently and am hooked! I'm Italian-American and never really paid attention to my Grandmothers' cooking. Fortunately, one of my aunts wrote a cookbook many years back with my Sicilian grandmother's recipes. I made my first dish of fresh pasta in many years due to the inspiration of these Grannies. These women are all truly gems! Thank you.

I have great grandparents coming from Abruzzo. Thanks to Pasta Grannies I get to learn how to make pasta and Italian foodstuff since that is part of my heritage, I ought to learn about it.

I’ve made Nonna Igea’s timballo many times! It’s worth the effort and is fantastic!
Timballo is the queen of Abruzzo cooking (la cucina abruzzese) and being very chauvinistic (as we all are as far as cooking is concerned) some will say that no real civilization exists without a timballo :-) The crepes are locally called scrippelle and although some will say that they belong to French cooking, they are originally Italian, then introduced in France by MAria de' Medici (I know I know, I am being chauvinistic :-) )

Same with the macaroon and bechamel sauce. They actually originated in Italy, having been introduced to France by Catherine de Medici's chefs.

I am originally from Abruzzo. My grandmother has always used to do Timballo for Easter and Christmas, needless to say that it has always been my favorite dish over time.
With my Grandfather passing, she stopped cooking like she did. This two events of course left me with a big hole in my heart. I miss both, my lovely grandpa and that amazing timballo she used to made. Hopefully she'll recover, one day. Anyways thank you for these great videos as always! Keep up the great work! “Nonna knife.” Perfect description. I always wondered why they all seem to use the same knife, and not a particularly sharp one, at that.

also every nonna has that plastic bowl with ridges.
I saw the same type of knife being used in Greece also! I thought it was a butter knife...

First ever video I've seen of Pasta Grannies, this is just tremendous! Thank you for organizing and cataloging this important culture and heritage and blessings upon the women who have created and perfected these culinary expressions of love!
My mother used to do it and called as "pancake lasagna", she learned from her mother-in-law (my Nona) who came from Teramo to São Paulo in early 1900s

I didn't even know about this dish before watching this video, my family is from Naples and I live in Romagna (which is on the Adriatic as well as Abruzzo). That's what they mean when they say Italian cuisine is heavily regionalized, I so love my country's culture!

Another winner, Vicky! Could you also do this as vegetarian with salted and broiled eggplant slices? It looks amazing, as does everything on this wonderful channel.
hi Christopher, I think I might ask for suggestions from the rest of the community. I think the vegetarian combinations are endless! Butternut squash (diced, roasted first would be my take) and mushrooms (make duxelles) are two other options. You could also consider Savoy cabbage, stir fried with garlic and add some taleggio - I wouldn't bother with the tomato sauce in this case. Lentils would make it a hearty dish. As for eggplant, I would slice or dice it after broiling to contrast the layers. Have fun! best wishes, Vicky
The videos are so well made that I feel like I'm transported to the nonna's kitchen. I do follow the channel #VincenzosPlate . Perhaps this is the only video where he didn't get to talk much. Lol! I love pasta grannies! Every one of them is different and good and heart-warming at the same time. And I had heard of a timbalo before but I thought it was a small molded thing made with rice. But there's probably a million of em besides what I was thinking of. And I thought she was going to make a ziti when I saw the "palachenkes" (crepes) being made- HA I got that word from a Lydia Bastianich show I watched on PBS. Anyway I love this show and the nona's always grab my heart and I want to say KUDO"S to the lady doing the show. You can see how easy she must be to get along with and trust. So thank you for doing the show and for being so genuine.

I learned to make these crespelli from my mother and aunt whose relatives owned a business making mozzarella and ricotta. But we would fill each crepe with a ricotta/parmigiano mixture and roll them up, bake in a tomato sauce and call them manicotti. This looks like an interesting variation. Ho fame!

Ever part of Italy cooks different. I love all the ways . However my Family is Northern Italian
My mom's side of the family is Italian. My grandfather from Sicily and my grandmother from Milan. She passed when my mom was just 18 so I never met her but can't wait to.

I too am Northern Italian, From the Marche region. I’ve learned to make homemade pasta from my Nonny many years ago and still make pasta often, as there’s nothing like it!! I’ve never used the crepe recipe though. This is a wonderful, informative video, with a most happy and beautiful Nonny who reminds me of my own. I wish more younger people would try to make some of these recipes as they’re much easier than they look!! Bravo Nona!!

hi Matthew - Christopher Lord, another commenter, asked the same thing about veggie alternatives. As I said to him, there are so many variations you could explore (see below) in addition to what I told him, you could also try a ricotta and spinach combo. In the past I have alternated this with mushrooms. It's good. And you are right, I am English 😊. Vincenzo is Italian and moved to Sydney a few years ago, but comes home every summer (like a lot of Italians!) best wishes, Vicky
