Pasta Grannies share Rosa's recipe for 'sfoglia lorda' mini ravioli !

- Sfoglia lorda is a speedy way to make ravioli, and Rosa is a speedy pasta maker! She made these for the New York Times photographer - he is from Florence and he had never heard of this pasta before; it's special to the Romagna region, but deserves to be better known.

Definitely healthy chickens! I get my chicken and duck eggs from a local farm, and the yolks range in color from pale lemon yellow to almost scarlet, depending on what they have been eating. They are all outside in the fields during the day, so they get more than just grain to eat. I wish more people would choose humanely raised eggs and dairy. Yes, it costs more, so I don’t buy as many and rely on legumes and grains for protein, since they are far cheaper and last forever in my pantry.
This woman is my favorite Granny! I remember her from the Straw & Hay episode. Every meal she makes is packed with LOVE, she a treasure & example of cooking with heart!

Great job Vicky, The Pasta Grannies team and of course Nonna Rosa on another great video! I really found this pasta shape quite interesting as they remind me of the postage stamps you put on letters before posting. It also looks delicious! Definitely inspired me to want to try making it. : )

I wish my full blooded Italian grandma cooked like this. She was by far the worst cook to walk this earth. 😉. She used to buy her ravioli from her Italian friends and try to pass them off as her own. She was a hoot!

LOL... my grandma couldn't cook either, her only dish was stewed chicken with white rice... and she would make it like everyday. LOL I learned to cook from my aunt, she was a great cook... I think out of necessity. LOL
