94 year old Isolina makes 'taggiaen' pasta with basil pesto! | Pasta Grannies

  • 94 year old Isolina from Liguria shares her memories and her way of making tagliolini (taggiaen in her dialect) with basil pesto and potatoes.
    Her pasta uses 600g 00 flour, 1 egg, 2 tablespoons olive oil, 1/2 teaspoon salt, and enough water to make a dough (roughly 200ml)
    Her pesto consists of 1 garlic clove crushed in 1 teaspoon rock salt, 4 bunches young basil leaves (100g) 3 tablespoons pine nuts, 3 tablespoons grated parmesan, 1 tablespoon grated Pecorino Sardo, extra virgin olive oil to taste. One large potato.

      It's the result of hard work and good diet.
      In my village I have seen lot of old people above the age of 90 years they still have head full of hair and all their tooth intact, they have always done hard work which requires lot of strength and throughout their life their diet remained unchanged. They are like soo strong still I that age it's amazing.
      They say that the secret is "keep it simple and always keep the body working not just the mind"

    A marble mortar is good-quality equipment, but still, to make a blender-smooth pesto with one that nonna is fearsomely strong. Much respect.

    Not only do these pasta ladies make great meals, they are so strong to roll the dough, never use measuring cups, and can walk up big hills, & steps! I salute them & love this channel

      Always working to take care of her family and provide a beautiful home for everyone to feel welcome in.
      I remember my nonna fondly, I'd do anything to speak to her one more time.
      She passed away nearly 10 years ago and i think about her every day.

    She carried sand in a bucket on her head as a child. That sounds like the women in Africa carrying water on their heads in palanganas. The culture of the world is more alike than not. We human beings separate ourselves from each other when we're really mostly one species. This woman reminds me of the grandmother's I saw in villages in Nigeria and Ghana. The ingenuity, and love in the kitchen is universal human culture.

      Women carried buckets on their heads all around the world in all cultures. It's really a universal human thing, I think! You hardly see it nowdays in first world countries, but even they used to carry things in such a way in the past

    Pesto is my favorite of all the sauces! My uncle brought the recipe to my mom, after being stationed in Italy. She grew basil and made pesto for years. It was lovely indeed, from the freezer in February, a taste of summer when it was still 5 months away. Lovely nonna seems well too aware of the times we live in.

    Lovely video, that dough she was rolling looked fantastic. You could see the quality [well to me anyway] in the texture as she was separating the taglioni on the board. So light, soft & smooth.
    I know its also hard work, but it must be so rewarding for you to travel to all these little nooks of Italy, seeking out, meeting & spending time with these foundations of Italian food. Plus we get to share in it, so thank you.

    I love the similar techniques used by Isolina and Marietta in another video eg the rolling and ‘slapping’ of the pasta, and separating the strands after cutting so they don’t stick.

      It... is. I'm in Riomaggiore, Cinque Terre, and the weather is mild during winter, with beautiful sunsets. The trofie pasta and pesto is glorious, and the oil in the store is from the hills surrounding the towns. Lovely people, and the brutal hiking up and down the hills makes for good fitness. There are many paradises on Earth, and this is one of them.

    Congratulation for your network :D I am from Camogli (Genoa), this of Isolina is very traditional recipe of Ligurian Pesto and "taggen" (that is the regional dialect name for tagliolini). I leave you some adice: to make it even richer this great plate, add green beans and, when season permits, also fresh fava beans to your special Pesto recipe for a 100% Ligurian meal ;D Ciao.

      But it’s the traditional way to serve pasta al pesto with potatoes and green beans ,this lady doesn’t like green beans, but it’s the usual combo. Sometimes when the season is right green beans can be substituted with fresh and tender broad beans... delicious anyway!

    My nonna used the exact same pesto recipe, which i havent seen made anywhere else. She was a nanny for an aristocratic family in Genoa during the late 1930's. The family chef taught her this recipe. We are now 4 generations down still making it the same way.

    Pesto=automatic win. It's so refreshing to have a basil sauce to break the monotony of tomato or cream. I love them both, but having a third option, especially the cheesy, salty, olive oily, herbal goodness of pesto just kind of balances things out, aye?

      You can cook pasta without either tomato or pesto. there are hundreds of recipes.

      @@FC-hj9ub Oh I know and I've enjoyed quite a few. Unfortunately, where I am, it's 90% tomato, 10% cream and nobody even imagines anything else. Therefore, pesto is a refreshing treat.

      You can also mix tomato sauce and pesto and it tastes wonderful! My grandma did that sometimes when the pesto she had left wasn't enough for a portion of pasta on its own.

    A spectacular pasta and pesto instruction. She’s so wonderfully serious. I love her comment: “Poor Italy. Where have we ended up.” It seems she may not appreciate the new neo-fascist government. She certainly remembers the government of the 1930s. I also love that she doesn’t like green beans with her pasta, potatoes and pesto; therefore, she doesn’t use them.

    Beata Isolina! A 94 anni ancora così in forma. Anyway I come from the same region, Genoa and putting Pecorino in the pesto is a sort of sin! Only Parmesan. But there you go, Deiva is only 60 Km away and they have their own version.

    i love this and i love the slow pace of it all; i admire the raw 'unedited' way about the filming. additionally, its so wild how in the US, we tend to bring this elevated luxury to "authentic" meals when it is completely opposite at its foundation. Videos like these make me question life in America lol.
