Every day I get so many emails and comments asking why you can’t locate the music I use or find it using Shazam. I purchase music licenses for almost all the music you hear in my videos. I buy them them from various royalty-free production music sites and most of the time they don’t list the performer because it’s music made only for film productions with an audio watermark throughout the entire track, unless you purchase the single-use license for $50-100 per track. I use a lot of opera so often I’ll reference the opera but I won’t be able to direct you to a recording of that specific performance that you could stream or buy on iTunes or Spotify. Hope that clears things up and thank you for appreciating quality music.

Thank you for watching. The ingredients are listed below. I had quite a bit of leftover pasta because I normally make it in a larger rectangular pan, serving 12 people (or five all having seconds). You could halve the pasta quantities if you plan on very delicate layers of pasta or add a bit more meat and another can of tomatoes to extend it for a bigger lasagna.
1/2 cup cooked spinach
4 3/4 cups 00 flour
1 teaspoon salt
4 eggs, 2 yolks
1 tablespoon water
half a bunch of celery
2 large carrots
3 small onions
olive oil
2 large sausages or 1 cup of pancetta finely chopped
800g mince meat
250ml white wine
2 cans crushed tomatoes
1 tomato can of water
2 teaspoons salt
90g butter
2/3 cup flour
1.5 litres milk
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon nutmeg
Parmigiano reggiano
butter to grease pan

I signed up for an Italian language on-line course due settimani. I adore when I hear the two of you speak Italian. This post completely reminded me of my Nonna in la cucina. I can’t wait for my first visit to Italy in a few months. Grazie and forgive me for using a few Italian words. I’m just filled with joy learning my great-grandparents native language. I thought I wanted to learn a few words for recognition. Now I’m practicing conjugating verbs! I want to learn as much as possible. Then after my three week visit, return another time when my Italian improves!….hopefully!

My friend graduated from Cordon bleu and brought her Atlas over and cooked us some lasagna. Salad dressing of sardines. The time it takes to prepare is tedious but so rewarding. Prayers and thoughts for the people of Emelia Romagna. The lasagna looks very good. I made a Bolognese Lasagna with spinach pasta. It's scary making the pasta because it is so delicate especially after cooking them, but everything came out alright. The pasta is so thin, whereas the pasta I use to buy at the store is not so thin. It was great to hear Gianfranco laugh when you are being silly. Take care and see you in a week

I just finished a lasagna over the weekend and can’t wait to try your recipe. I have a recipe that uses cheese ravioli for the pasta layers, red meat sauce and the mozzarella and Parmesan. No, I haven’t but that’s certainly got me thinking… I’ve only pressed them to use on birthday and Christmas cards. We have so many roses in bloom right now, it feels a shame to let all those lovely petals go to waste.

I found a spinach asagna with pesto years ago which my family adore. I recently served it to a vegetarian friend and he took the leftovers home!
Sauté 2 onions and mix with with 2 lbs chopped raw fresh spinach.
Mix the onions/ spinach mix with 2 lbs ricotta, pesto (approx a jar- I make it fresh). Make sure it is thoroughly combined and check for seasonings.
Layer the green lasagna, spinach/ricotta/pesto mix and the mozzarella and some grated parmesan. Make three layers. Finish with a layer of lasagna, some olive oil, and grated parmesan.
Bake for 40 mins at about 350 degrees.
Sorry for the vague amounts- I don’t have the recipe here and in any case I eyeball it.

For your information Kylie, a béchamel sauce that you add cheese in it, is called a Mornay sauce. So you add Mornay sauce to your meat in your lasagna !

Such a treat to stumble across your latest video, and I LOVE lasagna! I have an intuitive sense for making/building things, but I’m without a clue in the kitchen. But your video made me think I could successfully make this myself. I especially liked the tip for making the paper thin pasta sheets.
