Fantastic recipe. My mom used to make this. She made a rack, using an old window sheer to keep out the bugs. Watched it dry out hanging from the clothes line. Love the smell and taste of the steamed duck over rice. Thanks for bringing back fond memories.
Marvellous recipe. I have not had this pressed preserved duck for decades because you cannot buy this in Europe. Thank you. I shall try making one this week as my location gets snow bound in Winter. Flies are not around.

我在加拿大北部住,臘鴨好貴,多謝你的分享,會跟著做,不明的是要曬20天這麼久,不變柴鴨咩
曬乾一點會更香。。你可以先曬15天,砍一部分來試試口感再決定要不要繼續曬。。曬得夠時間的話自然能聞到腊鴨香味的。。😋😋

我住在英國北部,陽光較少,九月份只有十多度多雲,仍有機會做臘鴨嗎?
夜間最好低於10度的氣溫會好點。。白天十幾度是OK的,不過要有風和陽光的日子,起碼最開始的幾天,更加需要。。🤗🤗
