    Here is the english version
    Ingredients:Pork Belly
    Marinade: Char Siew Sauce, Fish Sauce, Oyster Sauce, Sugar, Soy Sauce, Salt, Fermented Bean Curd (Fu Yu), Five Spice Powder, Ginger Power, MSG, Cornstarch
    Sauce: Malt sugar, rock sugar, ginger juice, salt, water
    Preparation (meat)
    1) Combine all the marinade ingredients together.
    2) Mix the marinade with the meat
    3) After marinating for 30 minutes, skewer the meat with a steel skewer and place it inside a pre-heated oven. Grill for 25 minutes on high heat; remove from heat and let it cool, then pour sauce on the meat.
    Preparation (Sauce)
    1) Combine rock sugar, ginger juice, salt and water over low heat until all the ingredients melt.

    My Hong Kong Chinese neighbour gave me the simplest recipe and it was delicious. Pork butt, 21 spoons of sugar and ground bean sauce in a bottle. That was it. Marinate over night. BBQ and finally lots of honey brushed over while on BBQ. I am living in Canada for past 30 years and brought back memories.

    I just used the lee kum kee remade marinate but I have made the marinate using a bunch of ingredients. It’s pretty pretty easy to make and only takes about 30-45 minutes to cook.

    I have been working on my own recipe based on most of the more realistic recipes. I have an old china cook book, it is the only place I have seen some of the more exotic things such as are in this work of art!!!! thank you , a million times thank you. love the oven!

    I think the ingredients are as follows (in the order they were added)
    Marinade:
    Soy Sauce, Maggi Chicken Stock, Maggi Oyster Sauce, Fermented Bean Curd Nam Yu, Fermented Bean Curd Fu Yu, Sugar, White Pepper, Chinese 5 Spice Powder, Salt, Garlic Powder, Coriander Powder, Ginger Powder and Food Coloring.

      you dont use Nam yi for BBQ pork or Fu yi as both are used for different meals in fact there was no sign of either or any other form of Dao fu, all of the ingredients used looked too modern and nothing traditional in Cantonese Char Siu but I just checked and the Video was done in Malaysia so it will be a different style and probably Hokkien Style and will taste amazing, but I am confused if that was sugar or MSG going in?

    never saw this type of cooking unit..Most Chinese restaurants use a BBQ oven whcih is nothign more than a large box with a burner on the bottom. This is amazing

    一看就知道是馬來西亞,新加坡等華人制作的燒臘,在香港不會用這麼多調味料的,一般都是生抽老抽,鹽糖味精就夠用,香料也都是沙薑五香,什至咖喱粉的

      其實什麼部位都有人用,只是現代人怕肥,想健康,才選用瘦一點的位置燒,梅頭本身又夠軟,醃制時食粉也不用加,當然好

    I just prepared some marinade and I put one block of the fermented tofu (紅辣腐乳) inside, plus some of the red sauce. I am going to take some 800g of pork, but here they take one block for some kilos of meat?! And I would never use food colouring, since the colour should come from the ingredients. The fermented tofu I bought is dark red, plus the dark soy sauce and molasses this should come out nice in colour! :) It's my first time to make char siu by myself, so I hope it'll taste as good as it already looks ;)

    Honestly, im a chef too, but i notice u r giving not proper recipes.... those ingredient that u putting in doesnt hav fish sauce.... n as i know, i never seen any chef that i know make char siu with fish sauce.... if u want to share ur recipes, do it in proper n honest way, as i see in the video, u not giving detail recipe, n u lie with few ingredients....

    I air dry mines with a fan then goes in the cold smoker for an hrs. vacuum seal afterwards. oven bake when i'm ready to eat it.

    Asian men have nice arms for this, not hairy. I wanna go to this restaurant. looks yummy. I'm not crazy for 5 spice powder, I wanna use it, but just don't dig the flavor. I should eat it more, i'll get use to it. Great recipe, Thanks.

    Tip, put all the pork into pressure cooker to steam for 20 minutes, than continue with the process, u get a Char Siew that melt in your mouth and soft

    It would have been more helpful had we axed the elevator music and added some narration so that we knew what was being done and what ingredients were being used. I know that soy sauce, hoisen and/or oyster sauce, fermented red bean curd, rice vingar, sugar(some use brown sugar), garlic and ginger are main ingredients, but is there anything else that gives this meat its unique flavor?

      It's the same sauce recipe but not the same batch as the raw marinade. You can see after the raw marinade, there was very little left, then when he poured it over the cooked meat he had much more. also, the cooked marinade looked to be of thinner consistency (maybe no cornstarch or whatever the thick red paste was.

      +Tommy G usually it's a sweet soy/honey/brown sugar glaze that is put over the roast to finish and causes some charring... not the marinade.

      bob Last it’s not the marinade but the glaze that’s poured over the roasted meat which is then put back into the oven to caramelize.

      the final marinade is not be from the same as 1st as it is the glaze coat and has extra ingredients in it, and if you did use the 1st marinade over cooked meat you would be ill.

    *At 4.01 when hanging up the raw meat the raw uncooked ones were pushed against the cooked one's at the back and they did touch, thats not good cooked and uncooked foods should be completely seperate so not to get cross contamination*

    I buy char siew premix from Chinese grocery. Select meat with some fat. When hung in oven, most fat drips off but gives a pleasant aroma. To collect fat drippings, use a deep baking tray, cover it with aluminium foil and add about 3/4 inch of water. That makes cleaning easy.

    The sauce was poured on raw meat then on cooked meat and hung to drip off. That may not be the most sanitary thing. I have never seen anything so completely appetizing as this. Never.
