    I learned today (because of my six year old's inquiries) that chili had it's roots in being a portable trail food. It would be made as a pounded mixture of beans, chilis and beef suet (at it's bare minimum) and left to harden. Then all you had to do was boil some water on campfire and drop in a block and you would have chili! Anywho, my first thought was "sounds like something Emmy would do." 😆

      I work in a butcher shop and have had people ask me for "chili brick". Personally never heard about it but I wonder if they are related.

      @@thomandalicia a quick Google search and it says a packaged chili brick consists of: "Beef, Beef Hearts, Oats, Enriched Flour (bleached Wheat Flour, Malted Barley Flour, Niacin, Iron, Thiamine Mononitrate, Riboflavin, Folic Acid), Spices, Flavorings, Salt, Paprika, Vinegar, Monosodium Glutamate."

      whatscookingamerica.net/History/Chili/ChiliHistory.htm - Here is the ariticle with chili's origins/ legends. Brick chili is still commercially available at some specialty stores (not around me) but sold as a frozen or refrigerated item and not shelf stable and dry.
      www.cdkitchen.com/recipes/recs/15/Old-Fashioned-Brick-Chili103202.shtml. - Here is a basic recipe, it does not call for beans. Apparently, beans are not in most Texan recipes. Some recipes use oats, or flour, or nothing to thicken it. Everyone had their own secret sauce.
      Personally, my only encounter with suet is in the context of compacted bird seed cakes. I don't know about you all but my chili isn't anywhere near that greasy. It make me think that some sort of starch (be it beans, oats, flour, masa) would be necessary just to homogenize the fat with the water. Otherwise you'd get a thick wall of fat on top with beefy water.

      Most cheeses are Lactose free due to the fermentation process. At least where I'm living :D I'm intolerant too and I can eat most cheeses without a problem 💝

    I stumbled upon some 'cheesiness" when I mixed steamed zucchini with nutritional yeast, splash of unsweetened almond / or soy milk, Bragg's brand Liquid Aminos (non-fermented soy sauce), and kelp vegetable powder, blended altogether that creates a kind of ramen-esque and simulated goodness!

    Thank you for this one! My teenage son has a dairy allergy that we only just learned about a year ago and finding tasty alternatives to all the dairy he loves is difficult at best. This will give us a place to start in trying to make our own so, again, thank you!

    I once made vegan mozarella using a cashew base and tapioca starch and it had a beautiful stretch. I put it on baked ziti!

    Hi Emmy! I’m from Oregon and we have a restaurant here called Cafe Yumm. They’re known for this mysterious nutritional yeast sauce(vegan,gluten free,peanut free) aptly named “Yumm Sauce” you can order it online! Please give it a try in your free time! I’m sure you’d enjoy it as my family does

    Here in Brazil we use mandioca for vegan cheese. It’s really really good!
    We call it “mandioqueijo” ( mandioca + queijo, which means cheese).

    I'm VGF and I like how you said you are a former vegan. And still like to make vegan videos. I dont hate if you went back. Some people debate the ingredients of nutritional yeast but what I didnt know how glutinous it really is. All of your videos are always so food educational, entertaining with history. Fun!

    Speaking of "Vegan Alternatives," have you ever done a video on Aquafaba, specifically using it as an eggwhite replacer? I think people would definitely be fascinated to see how deserts like macarons and merengues could be had via all plant-based ingredients. :)

There are plenty of meals with no eggs, I've used to work in a school restaurant, and we've got some kids with allergies to eggs, more intolerance, and the chef make them meals with no eggs, simply. Maybe some mushrooms or soy bean have the same protein's than eggs ?

      @@yazdhenab. I don't give them eggs!! I just haven't found an eggless sub that I am satisfied with. Some are too glue like. Some totally alter the taste of recipes. Chickpea froth is the best sub I have found so far.

    Try the fried tofu “chicken” from Mary’s test kitchen! I’ve done it twice, but used my regular fried chicken recipe with soaking the “chicken” in buttermilk and then breading it in usual breading. So delicious!

    When my husband couldn't eat cheese, we cut very thinly sliced zucchini or shredded zucchini for a cheese-like texture on some things. There is a recipe online somewhere for a melty zucchini cheese as well if someone here can't eat cheese and wants something similar!

    I love nutritional yeast. I started eating it before I went vegan because a local theater has it as a topping for the popcorn there. I was hooked at first bite. I've been vegan for a while, since before Daiya. I thought it was so cool when it came out. These days, though, I'm all about those cultured nut "cheeses". They are made with the same cultures as cheese, and so they just have that lovely sharp taste. They're not so gooey and melty but the *taste* is amazing. My favorite is Miyoko's Creamery Sharp Farmhouse. Have you tried them?

    OH MY GOD! So I was randomly thinking, and what if you like, chilled this into a kind of loaf and then sliced pieces off as needed. Like, you could grill your cheese all together, or use it on not grilled sandwiches. I am really going to have to try this. Thanks Again, Emmy!!

    I saw juns kitchen make a cheese like that in his vegan burger recipe! But he had crashed chachews and agar agar in it also he used potatoe starch instead potatoes.
    I would love you to try more vegan alternatives.

    Btw Emmy, what about using natto in your mix? It kinda smells like cheese, has a really gooey texture and also has the fermented side of cheese too, it might make it closer to actual cheese

    My favorite brand of vegan cheese is called Chao, which is made from fermented tofu (also called chao). It blows Daiya out of the water in terms of both taste and creaminess, and makes for the best vegan grilled "ceese" ever. I would love to see you try to make fermented tofu cheese. I know if anyone can demystify it, you can!

    I’ve made a version with cashews and tapioca starch to give it the gooey action. It’s good to make vegan Mac n Cheese, or add spices to make a queso dip.

      What Jen and Lucia said! The first few weeks are the hardest, but it becomes a habit. It’s been 6 months for me. I still get cravings every now and then, but it gets easier with time. Don’t beat yourself if you mess up every now and then, just get back on track and eventually it’ll stick! Good luck!

    talking early - mid 2000s, the
    only place I ever found and
    bought vegan cheese was
    Trader Joe’s, but then round
    2010 or 11 they totally changed
    the formula and it didn’t taste
    the same or melt as amazingly
    as before, I was sad til I discovered
    Daiya cheddar slices! Anyway, thanks

    For that matter, have you done much by way of air fryer recipes, especially vegetarian ones? I've done some searching on your channel, but so far haven't discovered any air fryer recipes other than the taste comparison of deep v air frying KFC.

    Thank you! I've been eyeing up recipes like this lately and wondering how they taste/feel. I had seen several that called for mustard and miso powders instead of sauce or paste, I wonder how that would affect the final texture.

    Grainaissance makes a cinnamon-raisin mochi that they used to have at our local Whole Foods...that was a favorite weekend breakfast for the whole family. Even my boys who were elementary school age, loved it. They both love mochi in all forms now.

      Try the brand 'sheese' red leicester flavour. Absolutely to die for. I buy it from my local Woolworths. The closest I've found to tasting like cheese and works perfectly in jaffles and toasties :)

    I remember when i went vegan (am an ex vegan too, but still vegetarian), vegan cheese was like an expensive rarity you had to import and it tasted like healthy garbage 😁 Now all grocery stores have vegan cheese that tastes good! I still cook with it sometimes when I‘m cooking for vegan friends. You should totally try some of Miyoko Schinner‘s recipes, they‘re actually aged vegan cheeses!! And maybe try Tofu Misozuke sometime too?

    My mom use to make me cheese a ketchup sandwiches in the microwave. My daughter and I still eat these to this day. They’re Yummy.
    Take 2 slices of white bread (I find white bread doesn’t take away from the flavors like Wheat or Potato bread can), add some ketchup to both sides (I like to leave a little area in the center of both slices without any ketchup so the cheese melts to both slices of bread and holds it all together), take 2 slices of Cheese (we use yellow/American cheese) and wrap the sandwich in a paper towel. Cook it in the microwave for about 30 seconds. Let stand another 20 seconds and enjoy.
    Don’t cook to long or it’ll become chewy. Also if you let it sit to long it’ll become chewy as well.

    Emmy describing the puffed up kirimochi makes me feel like it'd be similar to Brazilian pão de queijo. It's a cheeseball made with yucca starch. It's one of the most popular snacks in Brazil
