It would be made as a pounded mixture of beans, chilis and beef suet (at it's bare minimum) and left to harden. Then all you had to do was boil some water on campfire and drop in a block and you would have chili! Anywho, my first thought was "sounds like something Emmy would do." 😆

It make me think that some sort of starch (be it beans, oats, flour, masa) would be necessary just to homogenize the fat with the water. Otherwise you'd get a thick wall of fat on top with beefy water.
Most cheeses are Lactose free due to the fermentation process. At least where I'm living :D I'm intolerant too and I can eat most cheeses without a problem 💝
I stumbled upon some 'cheesiness" when I mixed steamed zucchini with nutritional yeast, splash of unsweetened almond / or soy milk, Bragg's brand Liquid Aminos (non-fermented soy sauce), and kelp vegetable powder, blended altogether that creates a kind of ramen-esque and simulated goodness!

When my husband couldn't eat cheese, we cut very thinly sliced zucchini or shredded zucchini for a cheese-like texture on some things. There is a recipe online somewhere for a melty zucchini cheese as well if someone here can't eat cheese and wants something similar!

I've been vegan for a while, since before Daiya. I thought it was so cool when it came out. These days, though, I'm all about those cultured nut "cheeses". They are made with the same cultures as cheese, and so they just have that lovely sharp taste. They're not so gooey and melty but the *taste* is amazing. My favorite is Miyoko's Creamery Sharp Farmhouse. Have you tried them?

I saw juns kitchen make a cheese like that in his vegan burger recipe! But he had crashed chachews and agar agar in it also he used potatoe starch instead potatoes. I would love you to try more vegan alternatives.

My favorite brand of vegan cheese is called Chao, which is made from fermented tofu (also called chao). It blows Daiya out of the water in terms of both taste and creaminess, and makes for the best vegan grilled "ceese" ever. I would love to see you try to make fermented tofu cheese. I know if anyone can demystify it, you can!
I’ve made a version with cashews and tapioca starch to give it the gooey action. It’s good to make vegan Mac n Cheese, or add spices to make a queso dip.
What Jen and Lucia said! The first few weeks are the hardest, but it becomes a habit. It’s been 6 months for me. I still get cravings every now and then, but it gets easier with time. Don’t beat yourself if you mess up every now and then, just get back on track and eventually it’ll stick! Good luck!

Grainaissance makes a cinnamon-raisin mochi that they used to have at our local Whole Foods...that was a favorite weekend breakfast for the whole family. Even my boys who were elementary school age, loved it. They both love mochi in all forms now.

I remember when i went vegan (am an ex vegan too, but still vegetarian), vegan cheese was like an expensive rarity you had to import and it tasted like healthy garbage 😁 Now all grocery stores have vegan cheese that tastes good! I still cook with it sometimes when I‘m cooking for vegan friends. You should totally try some of Miyoko Schinner‘s recipes, they‘re actually aged vegan cheeses!! And maybe try Tofu Misozuke sometime too?
My mom use to make me cheese a ketchup sandwiches in the microwave. My daughter and I still eat these to this day. They’re Yummy. Take 2 slices of white bread (I find white bread doesn’t take away from the flavors like Wheat or Potato bread can), add some ketchup to both sides (I like to leave a little area in the center of both slices without any ketchup so the cheese melts to both slices of bread and holds it all together), take 2 slices of Cheese (we use yellow/American cheese) and wrap the sandwich in a paper towel. Cook it in the microwave for about 30 seconds. Let stand another 20 seconds and enjoy. Don’t cook to long or it’ll become chewy. Also if you let it sit to long it’ll become chewy as well.

Here in Brazil we use mandioca for vegan cheese. It’s really really good!
We call it “mandioqueijo” ( mandioca + queijo, which means cheese).

i made a chocolate mousse with it once, the texture worked out well but you could definitely taste the chickpea water in the background

Grainaissance makes a cinnamon-raisin mochi that they used to have at our local Whole Foods...that was a favorite weekend breakfast for the whole family. Even my boys who were elementary school age, loved it. They both love mochi in all forms now.

Try the brand 'sheese' red leicester flavour. Absolutely to die for. I buy it from my local Woolworths. The closest I've found to tasting like cheese and works perfectly in jaffles and toasties :)

I remember when i went vegan (am an ex vegan too, but still vegetarian), vegan cheese was like an expensive rarity you had to import and it tasted like healthy garbage 😁 Now all grocery stores have vegan cheese that tastes good! I still cook with it sometimes when I‘m cooking for vegan friends. You should totally try some of Miyoko Schinner‘s recipes, they‘re actually aged vegan cheeses!! And maybe try Tofu Misozuke sometime too?

My mom use to make me cheese a ketchup sandwiches in the microwave. My daughter and I still eat these to this day. They’re Yummy.
Take 2 slices of white bread (I find white bread doesn’t take away from the flavors like Wheat or Potato bread can), add some ketchup to both sides (I like to leave a little area in the center of both slices without any ketchup so the cheese melts to both slices of bread and holds it all together), take 2 slices of Cheese (we use yellow/American cheese) and wrap the sandwich in a paper towel. Cook it in the microwave for about 30 seconds. Let stand another 20 seconds and enjoy.
Don’t cook to long or it’ll become chewy. Also if you let it sit to long it’ll become chewy as well.
