My friend, who lived in Haiti for 10 years and had to use a lot of powdered milk, said if you reconstitute it and allow it to sit overnight, and then add a small amount of sugar, it tastes more like regular milk. She was absolutely right. So I wonder if that would make a difference in this recipe.
I do that when I make hot chocolate. It's great.

If it's really that dry it would be perfect for pizza! Here in Italy, we use what we call "filante" which is a special type of mozzarella cheese, it's dryer and doesn't release an enormous amount of water like our mozzarellas normally do when baked

Fun fact: When my kids were little, and we were broke I used to extend milk by mixing whole milk with powdered milk. By keeping it at a 1:1 ratio of milk to reconstituted powdered milk it didn't taste too funky (kids didn't notice a difference) and it kept my grocery budget manageable. I still keep a thing of powdered milk around for quick baking and cooking.
My father used to do this when I was a kid in the 70's. Hate to burst your bubble, but we knew... And we weren't fans.

My dad did the same thing. If he couldn't afford whole milk, he would add a bit of sugar to powdered milk or mix condensed milk. My sister complained of the taste but he tricked her by keeping the milk bottle and pouring the prepared powdered milk in it 😜
Powdered milk and condensed and evaporated milk when reconstituted are much more expensive than fresh milk.

@@algonzalez6853 You'll still have your eggs. There's only a 24-48 hour window of ovulation per cycle (tho it should be noted that sperm can live for up to 5-7 days inside). Hormonal birth control just prevents that window from happening, it doesnt kill your eggs.
Dry milk powder is just skim milk. As someone who drank skim for many years, the flavor is very similar. I use dry milk powder in my homemade hot cocoa mix recipe. :) I would think the biggest difference between the cheese you made from whole milk and the powdered form would be its ability to melt and stringiness. Great video!

Not entirely. We have dried full cream milk powder from where we are. Aside from that we have dried skim milk powder, dried buttermilk powder too.
@@jomsies Wrong. Dry, skimmed milk powder is just dehydrated milk. You don't have to cook dry milk powder to reconstitute it. Cooking will change the taste but not if you just add water and stir.

Love the idea of dry powder milk being used in cheese, makes it way more accessible than all the recipes calling for completely unpasteurised raw milk. I wonder if other 'unsuitable' milks like UHT can be turned into cheese? (also dry milk is wonderful in coffee, it foams up like nothing else with one of those mini electric milk frothers)
I don't think UHT milk is ever useable to make cheese. But you are right, being able to make cheese with milk powder really helps with accessibility. In the cheese making group that I am part of, there are many people in different parts of the world who don't have access to certain types of milk who can then just milk powder to try different cheeses. I'm still a novice cheesemaker ( I've only tried about a dozen varieties) and I haven't tried any with milk powder but one day I'd like to do a side by side comparison.
You actually can make a cottage-like curd cheese with uht pasteurized milk, I don't remember the proper name for it but I've seen it being made
Yes, you are right. UHT can be used to make cheese that doesn't contain rennet. (Cottage cheese, quark, paneer etc). Where I'm from in Canada, UHT isn't really a thing and forgot that in that case, it will work.
Normal pasturised whole milk can be used for cheese making.

I have a large family and we do often have to get boxes of food from our local food bank and every box comes with a large bag of dry milk and I am always looking for ways to use it so it doesn't go to waste. I often use it to make homemade soap or add it to recipes calling for milk instead of using our regular milk. Now I am going to try using it to make cheese! Maybe it's not the best cheese quality but it will help get us through and I can use it to cook other recipes calling for cheese.

Sure wish the food banks near me have out dry milk. I love to keep it around for various things like making oatmeal. I actually prefer it because unless I'm in the mood to drink milk which is rare. I have trouble actually finishing the gallon. I

Not if you are in an area that doesn’t produce milk. In the Caribbean milk is imported so dry milk or canned milk like condensed milk is more common.

I watched a video produced in China about food production in different areas of the country, and when they did a segment on cheese, they kept referring to it as "milk tofu" and I thought that was incredibly charming. Emmy! Could you find/create a Lembas bread? In Tolkiens Middle Earth, Lembas bread was made by the elves and stayed fresh for a long time, and is very nutritious and filling. I have looked for recipes on Lembas bread, but it is always only nice looking, but doesn’t seem nutritious or filling. Would be interesting to see what you would come up with :)

*Powder milk recipe Mozzarella is more like a Scamorza*
I've made this from powder milk using *JUST powder milk & white vinegar*
with a pinch of salt ... *VERY simple an it's wonderful* ~ 😈🔺🦋
*P.S* the vinegar removes that powdery taste ...also this method takes about 15 mins
in total to make . *BONUS* if you add a 1/2 tsp of smoke flavor you get a version of
" Smoked Scamorza " aka Scamorzi 😋

@@JaimeeL901 4 pks powder milk , 15 cups water , keep stirring ,bring to just under a boil turn off heat add 1 cup vinegar stir ... when the curds form - strain out the whey , add salt (3/4 tsp) also add smoke flavor if you want that kind ... knead and form in to balls ( about baseball size ) then chill & enjoy 😁

My understanding has always been that acid set cheeses don't really melt but rather they'll cook like a halloumi would, for example.

The only milk my mom bought back in the day when I was lil in the 80s and early 90s was powdered milk.
Economical and convenient to have. Evaporated milk too. I buy soy milk in the shelf stable boxes. That way I always have it and don't worry about it going bad

Love all your videos. When my 3 children were very young I used to use nonfat dry milk when camping or of I was out of milk. I would put a little in their sippy cups and shake it up. I called it "Magic Milk" They thought it was amazing 😁

You can buy on Amazon dried milk powder that is whole milk. A lot of hikers use it in repackaging cereal and adding the whole milk powder for calories and taste. It's made by Nestle and called Nido. It might be worth trying it to make cheese.

So strange how people will see birth control as something controversial...it's healthcare!
It's controversial to a specific group in this country because it's been politicized.
I believe it's controversial due to the fact that for the majority of users,it's used to stop a life. I always thought it prevented one from getting pregnant, which is a heck of a lot better than the alternatives that some use.

Years ago I made some mozzarella using both whole milk and dry milk powder. Or I should say, I tried to make mozzarella. Somewhere in the making of what was supposed to be mozzarella I messed up in the most glorious way. I ended up with a cheese that was hardly anything like mozzarella, it was denser, a bit dryer but extremely buttery and rich, and absolutely delicious. It was one of the best cheeses I've ever had in my life, and I have no idea how I made it. I've tried recreating it so many times and have not come close to the results of that wonderful accident.
