Digging your tamper and rotating it while applying pressure is a good way to cause awful channeling through the sides of your portafilter and create an uneven tamp
Thank you for sharing your experience. Especially for the blow off hopper. I traced it back to home barista and it appears from tests, this mod is way better and cleaner than the Atom buikt in system. Two side notes, 1)now your single dose coffee ground will be finer because the coffee stays a bit longer in the burrs as there is no longer "above beans weight" to introduce the extra push. 2) when you tap on the bellow you push the beans which will introduce irregular fall speed for beans and therefore grinding inconsistency. Hello, great video. Would you also recommend the Mara x if you only drink 1-2 espressos or cappucinos a day The fact that the machine heats up for 20-25 minutes is not a problem in this case. The question is whether it harms the machine if you heat it up and switch it off after 1-2 uses. thank you
Hi, I make 1 or two beverages with the machine each day and there is no problem with switching it off after. The machine goes to sleep after 20 or 30 minutes on its own, but me I turn it off sometime between drinks. The machine takes less time to heat up in coffee mode than on steam mode, so this is a machine that has the option, I still love it a lot after 3 years of usage.

I hear the Marax ( new one ) has a steel boiler. The first one in their line. I've been emailing them for some time saying I'm not sure brass boilers are good and maybe they knew that but didn't want to change the line. Nice to see they have switched to strainless steel for the new marax
Yes, I do think it is a very good match. It is very hard to choose because I was also in that position to choose between the chrome or the black and in reality both are a striking match. For the black it was the mat black that caught my eye. No wrong choice possible here.

My usual shot in my marax is 18 grams to take 27 grams in about 50 sec from the time I pull down the liver and I don't know if I must increase time. Thank you
HI from Quebec. I start the timer when the first drop fall in the cup. Usually for 18g of beans I want 36g of liquid in about 30 to 45 sec. This number are only there to start you off and guide you, but you should experiment to see what you prefer. Maybe try for your 18 grams and 27 grams 30 sec to see if you like it, then modify to your liking. Grind your coffee coarser just to see. It is very difficult to give advice because there is so many variable, like the coffee, the grinder you're tamping. I hope this was a little helpful.

Thanks for the video. I own the Specialita for about 8 months now. I started noticing problems with it when I opened it to clean it. First I thought it was the misalignment and I fixed it but even now, I can only get my 20-25 second extraction when the burrs are touching each other. No one talked about this on RUclips and I don't know if that's normal or not. Where do you get your sweet spot? The local dealer won't look at it as long as it's still grinding and running. So that's useless.
I always grind very fine on my knob setting to get my sweet spot. I don't pay much attention now to the time of my shots, they tend to be long. What is important to me is that I am satisfied with the taste. I cannot answer if it normal on your grinder. There also the freshness of the beans you use, fresher beans I dial to coarser setting to get best extraction and finer with older beans. So my setting on my knob is in the turco section (very fine).
@@CajournoOddity so do you think your burrs are hitting each other when you're grinding? I'm not able to get long shots unless the burrs are hitting. I even changed the burr set. I see an improvement but it's still happening.

Hey Cajourno, please could you do me a big favour and measure the width of the opening of the bellows? I bought the specialeeeta and going to do the single dosing mod. I thought about the Niche, but I prefer the look of the Mignon, came with a better warranty and is a lot cheaper with comparable performance - especially using the mod. I almost bought the bottom scale, but there can only be one bottom scale! I got the 3kg Rhino Coffee Scale instead.

So far I’ve found the Mignon quiet and reasonably fast, 14s for 22g (of course, depending on setting), with consistent grinds. Cajourno. Now that you have tried the MaraX, the Victoria, and the Anna 2. I had two questions and be really honest, I know you will favor the mara over them all because thats what you went for but would you say there is any difference in the actual espresso quality between each machine? Does the Anna 2 perform just as good as the victoria and likewise, as good as the mara in producing a quality espresso? And if you were starting out again which one would you go for?
I think with my experience that all 3 machines can produce good quality espresso. I have not found taste difference with the MaraX. I would still choose the MaraX because it can produce with more ease multiple shot in a row and steam milk at the same time. I think the the Anna 2 is the best bang for the buck.

Maybe it is the residual grind left in your grinder from yesterday. You should try grinding about 2 to 4 grams of coffee to purge before the first shot depending on your grinder retention. I always do that in the morning and my shot are consistent

Hi! I do find that the mignion is very consistent. I get about .3 retention with that setup. I am very please with this grinder. :)
