Yakisoba 焼きそば or Japanese stir fry noodles started to appear in the 1930’s as So-su (= Sauce) Yakisoba (ソース焼きそば), and it was a poplar children’s snack at the mom-and-pop candy stores (dagashi-ya 駄菓子屋 in Japanese) in late 50’s.
Since then Yakisoba has been cooked and enjoyed at home and Teishoku-ya (Japanese diners), and became an icon for Japanese street food. As it is easy to set up an iron plate Teppan (鉄板) and find ingredients to make this recipe,焼きそば Yakisoba food stalls are popular at school events, festivals, snack shops, etc.焼きそば

When was stationed in Okinawa, I lived on Yakisoba on the weekends! That, and taco rice! Now, I make this at home with a Cole slaw mix, yakisoba noodles, and a plum yakisoba sauce!
I miss yakisoba big time. Was in Okinawa 82-83.
It was great out in town and the roach coach had some decent stuff too.
There was a place outside of Gate 1 of Camp Hansen, that was the bomb! They had the best yakisoba, the best yakitori, and good taco rice!

Just ate Yaki Soba. The key is steaming, brief boiling, and cooling of noodles. I like the sauce and noodles will concentrated. I like my noodles a tad dry. Then I mix the vegetables and meat. Love this dish.

@@romoelitoomelc.capistrano2327 it's more of a plum sauce... and, for the cabbage, I use a Cole Slaw mix... it has all the veggies used in making yakisoba.

Most likely just soy sauce. Most yakisoba place in Japan only use soy sauce.

I've seen it made as above with the addition of carrots, onions and pork wieners, all julienne. The additional ingredients are added at the beginning of the cooking process with the cabbage. Finish as in the demo with beans sprouts, soba noodles and sauce. Delicious!

Most "streetfood" yakisoba uses no meat. It's meant to be cheap after all.
これって、家で作る焼きそばより酷いでしょw
肉もないし、キャベツも大きすぎるし、モヤシも多すぎるし、焼きそばを炒める際にまったく水分も使っていないので、きっと麺もパサついているだろうからね。
しかも、出来上がった際に青のりも紅生姜もないなんて、商売としてあり得ないよ。
見ててイライラする、まず手順がデタラメ、旨味を出すのにラードを使ってない肉を使わないなら最低条件、麺に焼目もなし、水も入れない、最悪なのは2ミリの鉄板じゃ火力が弱すぎる
すげーな。焼きそばの入ってる外側のホコリやら、何やら(泥とか?)が付いてる、汚いビニールの外側で、麺を引っ掻き廻して、汚れを、麺に擦り付けてる?

焼きそばというよりは、「麺入りモヤシ炒め」のような感じですか。
肉も入ってないし、具のほとんどがモヤシですし、焼きそばというのには残念すぎます。
