It also means she’s authentic. We all appreciate that. The recipe looks interesting especially since I grew up in an Italian neighborhood. But I would try it except for the green peppers. I detest them. I sub a pablano pepper when it calls for a green pepper.

I'm Italian-American, second generation, but this looks absolutely delicious! One caveat. Always briefly saute your garlic in the oil for that nutty complex flavor.

I'm third generation. You know some guys (Italian) don't even use garlic in there bolognese, they say the real way to make it like the guys in Bologna is onion and celery and Beef,Veal and gnd pork. As for me, I like the garlic
I also put beef bouillon in my spaghetti sauce! Some people think I'm nuts for doing that but it gives it such a rich flavor.
Classic Bolognese is mostly beef broth with very little tomato in it . And you add milk at the end . You are not nuts . Still a good meat sauce is the best

Open top of tomato paste can. Remove the top. Open bottom of tomato paste can and push the paste through the can with the bottom lid. ( like an ice cream push-up). It will come out clean and easy.

hi, nice recipe, my secret ingredient is Worcestershire sauce as it makes the minced beef richer in color and flavor, it contains vinegar, molasses, anchovies, garlic, tamarind extract, chili pepper extract, sugar, and salt, I use olive oil and add some nice red wine, but I do use a lot of your ingredients like garlic etc, I am from Australia and we do not have marinated mushrooms in the supermarket, when ready to eat I add Parmesan cheese

I use worcestershire in my sauce too. It makes a really big difference.
I am Italian American, we always put tomato paste in our tomato sauce, a lot of us New York -New Jersey Italians call tomato sauce, "gravy". I usually don't like a meat sauce, but yours looks delicious and I can't wait to try it. I never thought of browning the ground beef and storing it, a good tip.Enjoyed yous vlog.
Same in New Orleans. Red sauce is called gravy.
My Italian friends in Brooklyn are of two minds but mostly call the spaghetti sauce well sauce.

Another little secret... when you buy your canned tomatoes, sauce or paste, buy the Basil & Oregano one. It's amazing. It's so good, sometimes I use it alone, if it's a side dish.

Me too! I love the Contadina paste that has Italian seasoning and cheeses in it. I used to just eat the can. Lots of sodium tho. Ouch. Bad when you're preggers. I ended up with preeclampsia. 🍅

I haven't tried that brand. My Publix tends to favor Hunts. It was actually one of the things that oddly "disappeared" from the shelf, not long ago (that, mac & cheese, and lima beans). But I will definitely look for that one next time 😁

Normally I wouldn’t watch a pasta video by someone not Italian because my husband was Italian and I had my gravy game down-this is what we call sauce but I lost him almost 2 years ago and have eaten very little pasta since his passing. I did watch this video and I made this today and paused my meal to leave this comment-this is really really good sauce!!! I used fresh Angel hair and wow….thank you♥️

I can't wait to try this! Its kinda like a pantry spaghetti ,big on flavor quick on time. I always add a bit of sauce to my noodles to keep them from clumping together. It may not be esthetically pleasing with flecks of meat and veg, but it makes for easier serving and noodles can be stored separately for next day reheats.
Every Italian restaurant I've ever gone to adds sauce to the spaghetti noodles as well as on top. It really doubles up the flavor!!
I toss the cooked noodles with a couple pads of butter. Stops clumping and adds another delicious layer of flavor

My mom taught me to add some sauce to the pasta before serving. It's great later cold just like that . Yum
I always store leftover spaghetti noodles with a few drops of olive oil stirred through, to keep them from sticking together

Ms. Tammy, I included the beef broth and also added a tablespoon of dark soy sauce. It really rounded off the flavor of the meat sauce nicely - very umami. Thank you so much for all your help in the kitchen.
I'm just here for your wonderful Georgia accent. To me it's the best of all the southern accents. When I was growing up my best friend from 3rd grade had a mom who was from Sicily and she would cook her sauce all day long while she listened to Italian opera on the radio and I'm convinced that the music was her secret ingredient 'cause that was the best spaghetti sauce I've ever had.
We all sound similar, what you are hearing is the old school southern accent found in Ga.,northern La.,Ms.,Ala.,and east Texas,Arkansas, Florida pan handle,mostly in rural areas
That deep south Georgia accent always reminds me of Scarlett O'Hara in Gone With the Wind. To me that's the most beautiful southern accent IMHO. My ancestors were from Western North Carolina and had touches of hillbilly because they were close to the Appalachian Mountains.

i can't use mushrooms in anything because of an allergy to them. But I do put the rest of the list in my spaghetti except I have homemade paste and sauce from our garden. So it may change the taste a little. Thanks for posting. Looks yummy!

Well, I heard her voice, and decided to keep watching. I can understand every word she say's. Soothing.
Finely grated carrots, onions, course ground pepper, garlic, fresh and granulated, thyme, and tomato paste, and of course fresh tomatoes all lightly sauteed together in olive oil contribute to a flavorful, nutritious pasta sauce. 👍 A for those who prefer or must avoid gluten try Trader Joe's brown rice pasta. You'll feel the difference. And see the a lack of weight gain.
Finely grated carrots sounds gross! Then I tried it. When lightly sauteed if gives off a lovely sweetness. Let the people know.
My favorite pizza restaurant said they add a small amount of finely grated carrot to the homemade tomato sauce, instead of sugar. Not only is it more healthy adding the natural sugar in carrots, it really helps knock down the acidity. It's a heartburn free sauce!

That looks so delicious. I have never considered adding beef broth. Everytime I eat spaghetti it takes me back to my junior high school. They were real cooks, not processed ready made stuff. They would serve the spaghetti and you could get shredded cheese on top - yum. To this day, I like to put shredded cheddar on top of my spaghetti😋.

I love marinated mushrooms and I had fresh mushrooms,I heated some Italian dressing, (restaurant style ) olive oil and balsamic vinegar. I poured it on the mushrooms and let ‘em sit overnight, and boy were they good!
My sister-in-law taught me how to make spaghetti sauce very similar to yours except instead of sugar she uses brown sugar and it makes the sauce soooo goood!!

You should try adding Italian dressing and grated Parmesan cheese to your pasta after it's done boiling ,It's good that way.

@@doratiscareno5856 Interesting!! I'm going to try that. When I cook the meat, I add a spoon of grape jelly to the pan first and let it melt. Then I add the meat. If adding onions don't add the grape jelly to the meat and onions, instead add a spoon if grape jelly to the sauce instead. I make my sauce very spicy so the grape jelly helps balance it out.

Tammy, I forgot to tell you that I put all the ingredients for the sauce in my instant pot. I cooked it for 20 minutes and a quick release. I felt like the instant pot would really marry those ingredients and it did.
Got my wife to be going on now for 20 years an instapot , it was a we gift lol , really not funny cause I use it more than she does but not complaining, I love greens, collard greens, turnip greens and she don’t so! The biggest instapot they make is what I bought beside that it comes in handy when I make my own dog food recipe, I’ve actually tried it and it ain’t bad if it came down to that or chit lens 🤮. Anyhow, I’m from South Ga also, but residing now in middle Ga. Raised up on the Chatahoochie River just east of the Alabama line, I’m rambling and got off the tracks there, but I just wanted to say, I just found this Dixie bell and I’m going to try her spaghetti sauce, lord have mercy I’m tired of Ragu and prego and I love marinated mushrooms too, I’m going to surprise my girl friend of 20 yrs and impress her, I’ll let you know Tammy what she says , shhh! Don’t tell her, this is our recipe now! 🙏Thanks Tammy.❤️
@@danieledwards8779 - something you can do with Ragu, etc., is to add a good shot of red wine to it. You will be amazed at how delicious it makes a “canned” sauce taste. For those days when you just want to do the minimum to get some food onto the plate and into your tummy. Any red wine will do. Ones with a full body work the best. Try it, I’m pretty sure you’ll like it - and so will your sweetie 😉🍝😉

I make my own sauce most of the time and always put onion, green bell peppers, garlic and tomato paste as my base ingredients. I put mushrooms in mine but now I have to try the marinated mushrooms. Thanks for sharing Tammy. 🙂❤

Spaghetti has been a treat for most of my life. I remember it as far back as 1955, 3rd grade. I was in Cub Scouts. Our den meetings were after school on Tuesdays. When I got home from the meeting, mom always had spaghetti on the table.

My dad was the cook in our family and he made his own sauce. I stood by him one day so I could write down his recipe. He used onions, peppers, garlic, oregano, basil, bay leaves, a little crushed anise, tomato paste, crushed tomatoes, tomato puree, and ground beef. My favorite comfort food. I'll have to try your recipe!

We use only fresh tomatoes 🍅 now. As we age, the acid causes problems! 👌😂❤️ I enjoy watching you! We love mushroom too! Sometimes already sliced, fresh mushrooms. Looks delicious! I add a few shredded carrots, it takes the bitterness out like the sugar does. I also put the drained cooked spaghetti in a bowl then add a couple of heaping ladeles of sauce and stir it up. It helps to kepp the pasta from sticking together. People can eat it a 1/2 ,hr later and it still wont be sticking. Yum!
You just gave me an idea to use up some of my butternut squash leftovers to use instead of sugar♡
you can also used pureed canned carrots for texture, color and less acidity and you get more sauce too!!!
Your sauce looked great, but we vary in using the ingredients, just a bit. I put some of my salted pasta water in my sauce (not the spaghetti), so the starch will help thicken or tighten up the sauce. I rarely use bouillon, because it's overly salty. I prefer canned Romano tomatoes, chopping them up to cook down. I've never eaten marinated mushrooms, but love the baby Bellas sauteed in olive oil, with onions and garlic. If it's fresh veggie picking time, I like adding diced sauteed zucchini in it as well.
Yes, the pasta water does help to thicken the sauce, but remember that it is (supposed to be heavily )salted too.
@@chrisberg98This is true, but I'm only adding a small amount of salted water to the pasta sauce. BTW, I use Kosher salt for my pasta water, not table salt; there's a big difference.
Tammy I have learned so much from your channel, thank you. I have a tip for those who might want a shortcut to a great spagetti sauce, use a can of hunts or Delmonte spagetti sauce and 2 tbs. Of sugar and garlic and whatever else you like.. I did not know about the mushrooms, will definitely try.

I did use only tomato paste and no tomato sauce but everything was just like you did , and I ate a plateful, bigger than I have ever eaten and loved every bite!!! And so did everyone else. That's the exact way my Mother fixed her sauce. Just doesn't taste the same without bell pepper, so I follow her recipe to this day. I also add a small pinch of ground cloves and thyme. That full plate looked so appetizing.
I put lotsa chopped onion, green pepper, mushrooms, some garlic...my secret is a lot of bay leaves, at least 10 full leaves , and for the coup de gras, a pinch or 2 of sugar to offset the tangy tomato sauce. Perfect every time.
For sure I'll like the marinated mushrooms. My secret ingredient for sauce is extra oregano. I love all pasta dishes but prefer no sweet sugary taste at all. Thanks for posting. 👍

My southern born mom used 1small can tomato paste, 1can tomato sauce, and 1 can Campbell's tomato soup with 1/2 soup can of water as her basic sauce .
Tammy, this is so similar to the way my mama made her spaghetti sauce…yum! Need to make this soon if I can afford ground meat!!! (I just remembered my mama put 1 bay leaf in her sauce…she loved bay leaves!)
Also, take one bay leaf and put on top of your flour when you store it. This keeps those little bugs from it. Also works with rice 😉
I add bayleaf to mine and quarter tsp of cinnamon.

Sounds tasty.! My current favorite "secrets" for meat sauces are finely grated portions of carrot and celery. Just because you can't see them doesn't mean they're not there. I'll have to try the marinated mushrooms.
I've ordered spaghetti with meat sauces quite a few times at this very, good restaurant. When I asked them why their sauce tastes so much better than mine they said "WE USE VEAL.'" Ground veal rather than ground beef or chuck. It's expensive and you'd probably have to order it from the grocery store ahead of time, but it makes delicious meat sauce.

I had a neighbor that was from Italy that showed me how to cook Italian. I add less sugar only a pinch. To sweeten the sauce try a little grated carrots. Another thing to try is after your peppers and onions become sauteed add your garlic but as soon as you smell the garlic add in your tomato paste to caramelized then your beef. The marinated mushrooms is spot on. You can also add a little lemon juice it will brighten the flavor and a small amount of red pepper for the spicy notes.

Adding butter at the end is also a great way to cut some of the acidity and mellow out your dish. So good.
You can use a cap of cider vinegar to bring out the taste as well.

Right. Years ago I worked with a lady from Italy who also said her family adds a little lemon juice - I've done it ever since. I can't stand green bell peppers, so they're OUT, but I always dice up celery small and sautee it with the onion before adding the fresh pressed garlic. A family friend (Italian) catered my dad's surprise birthday party years ago. When tasting his rigatoni, there was a really good flavor I couldn't figure out - it was Worchestershire sauce. OMG, you don't want to over-do it, but that's been my "magic" ingredient ever since. And I add fresh grated Parmesan directly into my sauce to cut the acidity. Happy cooking!

You should try black olives ,They're good in it.
Also try diced green apple. It adds a subtle sweetness with a toothsome bite, as well as tartness to downgrade any sugar.
Try adding a small amount of instant coffee to yr sauce...
It makes the flavors of yr sauce pop even more

Celery, carrot and onion [1.1.2] are actually the "sofrito" that forms the basis of most Italian cooking, and certainly Ragù alla Bolognese - a bit like the "Holy Trinity" in New Orleans cooking.
This looks delish! I'd use monkfruit instead of sugar and would use freshly grated parmesan sprinkled on top. This a great sauce recipe to make in a big batch, then freeze individual portions in ziploc bags to use on a busy weeknight. Tfs Tammy! I bet the extra sauce made it extra good!
Ya, I was thinking monkfruit as well. I usually use wine in my ragu, but with the mushroom marinade added, it may not require it.

When I first married my hubby and made him spaghetti, I always added smoke sauce and Italian sausage to my sauce. My favorite food on/treat is mushrooms and you absolutely must go heavy on the shrooms! At first hubby asked what is that unique flavor in the sauce and when he found out it was the smoke sauce he couldn't believe it. Now he can tell if I don't add enough smoke sauce, lol. My family tells me I should open an Italian restaurant because my flavors are so bold. It's not sauce without the smoke sauce.
My mom made the same sauce but with regular mushrooms so now I'm going to try it your way, it looks so yummy. God Bless
My mom used to make it similarly but no onions or peppers cause my insides can't take peppers or onions and I'm allergic to garlic.
A lot of folk whine that all the food I've ever had has always been bland.
(And no one in my family likes mushrooms)
Try sliced carrots and celery, the mushrooms would add to flavour and try a no salt tomato sauce, a dab of sugar will cut the acidity, or use Italian tomatoes , they are mild , . Use no salt or the least amount if you have a sensitive stomach. If you use turkey instead of beef it’s also better for the stomach, taste the same as beef without the high cholesterol and gives you protein. Also use grape seed oil to cook instead of olive oil, olive oil is not good on high heat . But use olive oil on your salads and even a table spoon in the morning helps stomach issues . If lemon does not bother you use it in the mix with your morning table spoon of olive oil and lemon juice.( half olive oil and half squeezed lemon ). Also water melon at night settles the stomach with a little ginger if you’re ok with ginger, just a sprinkle .Hope this helps.
I don't really cook any more but this is making me want to do it again. Love the idea of the Mushrooms, and a good ole Southern American spaghetti. Why not? We have some of the best cooks in the world, in my opinion. JESUS IS LORD!

This is super close, actually, to my Venetian grandmother’s Bolognese sauce. She used mushrooms, but not marinated. She also adds olives, crushed red pepper, and about six cloves of garlic, lol. After she ladled the sauce on to the pasta, she’d drizzle it with super good olive oil

I know this is an older video but it showed up tonight in my RUclips suggestions. As a fellow Georgia peach from south GA I too make southern spaghetti sauce very similar to yours minus the marinated mushrooms. Just night before last I told my husband if I had to request a last meal I’d request my spaghetti but now I’m going to try your sauce and I’ll bet it will be my favorite as a last meal.

@@jualinesadler1886, it’s very easy. I learned this from my Mother, who was a single parent. All she did was use can tamales, drained, a large can of Wolf brand chili with beans, a smaller can of regular Chili, a few chopped onions, Fritos, and grated cheese. I heat my chili on the stove, then layer in Pyrex dish. Cover with foil, and bake on 350 for 3-40 minutes. It’s easy and delicious.

Oh I forgot to tell you when my sins eating with me I use ground Chicken but make the sauce the same ways otherwise because my sun has hereditary Gout and can’t eat red meat ! Two tricks for you. 1) dip a clean coffee cup in pasta water before draining pasta. Dump noodles back in pot and add that coffee cup of starch water-no sticky noodles. 2) use tongs put single serving of noodles on a med low skillet then ladle the sauce over noodles use tongs to thoroughly mix sauce into all the noodles then dump into a pasta bowl and serve.
I do sort of the same thing. Only partially drain the noodles and dump back into the pot with some of the water retained.

I substituted the bell peppers with a splash of TABASCO sauce...and Subbed the beef bouillon by not draining to much of the natural sauce. Lord have Mercy it was Divinely Delicious!! Yeeehaw!!

I still love your channel and all that you share. My mom has me watching you. When my kids were young they didn't like the onion or the vegetables so I would run part of the sauce through the blender so I got the flavor of it of the Fresh Veggies but they didn't have to know it was in there. What I do is when I brown hamburger a brown a whole bunch at a time and then I break it down into bags and put it into the freezer and then when I want to make a meal I just grab that bag of meat that's already cooked
I like that you use bullion for seasoning. I do that all the time. Learned that tip watching Pitmasters and alot of Asian cooking channels. Pit masters (bbq) use beef/chicken in place of some of the salt and I have been doing it ever since. In every dish I make I do this, if they have chicken or beef as an ingredient. Secret ingredients in the best Spaghetti sauce EVER are Red Boat fish sauce, Soy sauce, and Worcestershire. No other added salt. It's an Umami explosion in your mouth.
Just do your thing and add those 3 things to taste but leave any salt out until after you add them.
