I made this this week, and my husband said it’s the best I have made. I simmered it for 30 minutes. I was amazed that it’s better than those recipes that take hours to cook!
My dad is 60 years old and has been cooking for a long time. Tonight we cooked this together and he can’t complement this dish enough! We both went back for seconds 😊
This is my meal go to, when I’m tired but want all in one meal…when you add your tomato paste create a gap in the veg and dump it straight on to the bottom of the pot, cooks the paste and deepens its flavor. ❤
Using patis... now that's an ingredient I woulda never thunk to use.... but after trying it, I'm using it for a whole bunch of other recipes you'd never thunk would work! Thanx for a great variation! (I like fried eggs/soft yolks with my spaghetti.... try it...esp leftover for breakfast next morning with garlic pan de sal toast!! ).
I'm kinda like you that I use fish sauce often. I find that it rounds out flavors like using msg. I make this country style Spaghetti with my wife's sausage gravy as a base , and fresh onion, tomato, green bell pepper, and fish sauce . Man, I love this style more than the slow long cooked sauce we make. And if my pork chili Verde needs a little something, I give it the fish sauce treatment too.

You can actually cook off the acidity from either tomato paste or chopped tomatoes. Try cooking the tomato base in the center of your vegetables and spices, use plenty of virgin olive oil and it will reduce the acidity as it cooks. Sugar can be added minimally to elevate the flavor of the sauce, too much sugar and your eating chef bouryardee.
The fish sauce is actually not actually a weird secret ingredient. My mom used to make a pretty traditional Bolognese sauce and she would always add a few anchovy fillets when she put the meat in the pot for the same reason. The anchovies would just dissolve into the mixture when breaking up the meat and were not even perceptible as any kind of fish flavor, but they definitely added that subtle umami to the whole thing.
I came up with a similar recipe only not as saucy. My youngest HATES super saucy pastas. The fish sauce is a great idea, I'm going to try that in my recipe, thanks!
Looks yummy! I'd add lots of mushrooms and olives and/or capers only because I like adding the kitchen sink. Oh, and homemade garlic chili sauce, which I know you cannot do because of the kiddos, but definitely give that a try. It's delicious in all kinds of soups and such.
I just made this recipe tonight and it is to DIE for!!! The fish sauce threw me off at first because, being from an Italian family, my mom never used fish sauce in any pasta sauce she made. Not sure if my Nonnie (that was what we called our grandmother) ever did, but she’s sadly no longer around to ask 😢. Also, we always cook our pasta separately from sauces and soups, otherwise they would swell up over time and become unappetizing. Still, this sauce is amazing. Thank you for sharing it with us. I can’t wait to share this with my mom.

Putting the veggies in the food processor is genius I love my spaghetti too . A friend of mine gave me a tip to add some ginger root to my spaghetti I was skeptical but ginger is very good for you and the added flavor was a home run. Your spaghetti sauce looks amazingly delicious

I'm making this spaghetti a second time now. Bought cento tomato paste and sauce, which makes a big difference!! The aroma and color are just amazing! Will never buy prego again! Forgot the Italian sausage link again… I didn't use it last time, but it was still very good!
A quick tip for you Christine. If any of your family, friends or basically anyone your cooking for are allergic to vegetables, let them know there is veg in your food. Just because you can disguise it with meat is not a good idea. Other than that it's a great recipe that l/we really enjoyed except for my dear old Aunt Anne who was/is in A&E suffering from her vegetable allergy..

Came here to say I made the meat sauce and it’s so good! Thank you for this! I didn’t have ground beef so I used ground turkey with the Italian sausage meat and also didn’t have the fish sauce but used this Trader Joe’s Mushroom Umami seasoning to add to it. Will try with fish sauce next time! Also LOVED the hidden veggies!!

I felt strange as a Mexican American going into an Asian market and trying to find fish sauce. That’s just not in my heritage to do haha but I did it because I was determined to make this after having a spaghetti craving watching your video. I just made it and my husband was telling me where did I learn to make such delicious spaghetti. He could’ve been so hungry anything would’ve tasted delicious but I’d like to think it’s this great recipe. I adjusted the quantity of crushed tomatoes because my husband prefers a less saucy consistency although next time I want to do it exactly the way you did just to see the difference. Anyway, thank you so much for this recipe! I’ve been having fun making delicious Italian food lately and this was another one added to the books!

I made a few weeks ago and it was so good! I can't taste the fish sauce at all! And for everyone recommending sugar, if you use good quality crushed tomatoes and tomato paste, you shouldn't need sugar.
This is a little similar to how we make our spaghetti! We also use ground beef and Italian sausage(spicy because we like spicy😆) Along with all those vegetables you used we also add green bell pepper and mushrooms😋
This was fantastic! I am in the middle of a move and thought I had Italian seasoning. Unfortunately that was the only ingredient missing. I was worried this would be bland. I had basil and fennel on hand and all other ingredients. This was still really good and my kiddos ate it up. Definitely adding this to the meal list. So easy!!

OMG! This is exactly the way I make my spaghetti sauce, carrots with celery and meat with sausage instead of ground pork alone I opted for sausage to have added flavor. Yessss, fish sauce no joke more umami flavor...
Looks like the sauce I make in my Instant Pot. Make the sauce, add some water, pasta (do not mix) and cook on high pressure for a minute or so. I cook pasta in sauce all the time.

Tip I learned is after the meat is browned I drain excess fat and add some milk maybe 1/2 cup to 2lbs of meat. Turn the heat down a little and let the meat absorb the milk. This makes the meat very tender. Then continue with the rest of your recipe.
Strange coincidence but, in the beginning of your recipe, before the sauce is added, is my recipe for stuffing. For stuffing, I add dampened toasted bread chunks to the veggie/meat mix, season, add more water, mx.

If you don’t have fish sauce at home, you can use some Worcestershire, also add a little bit of sugar to cut the acidity of the tomatoes.
Oh Worcestershire sauce is smart! It's also made of fish

Asian fish sauce can be over powering for the traditional Italian meat sauce.

Yeah, fish sauce is not a weird ingredient. Even Italy has its own fish sauce: Colatura di alici.

I caramelize the tomato paste with the veggies and also then add anchovy filets which beautifully just melt away into the olive oil. Great video!!!

You can skip the fish sauce and add a tin of anchovies to keep it authentic. My Italian heritage taught me this
