Great information. This is really a challenge job. I’ve been a food runner when I’m still study in secondary school just to earn some pocket money. It was a great experience. This video really changed my idea.I just schedule to read a college in CANADA for one year in culinary art. But really have to work for 12-15 hour per day? With so much danger.

Timing all the dishes at the same time is what I hate about eating in restaurants in the US. Dishes are getting cold sitting on the counter! Chinese restaurants serve a dish when it’s ready. Less stress for the kitchen and customers are happier.

厨房里还是需要能听懂烹饪的专业词汇,能和团队其他人沟通和配合,不是特别难,如果你去学徒,很快就会学会那些词汇的,加油👍
英文不好也是可以在西餐厅工作学习的,只要掌握一些基本的食材英文名,基本的交流就可以。你在那个工作环境下,会慢慢学会一些单词和基本的交流。我见过很多墨西哥人完全不会讲英文,依旧和一群美国人在一起工作。所以,语言并不是真正的障碍。只要你有心学,很快就会上手的。

在法国三星级度假村做过助厨,挨过打,挨过骂,也受过欺负。这个真的是需要心理很强大的职业,每天压力都很大,晚上10点下班后就觉得四肢都不是自己的了。我还曾经被切片机切过手。说多了都是泪。

中餐厨房倾向于猛火爆炒,油烟较重,环境确实比西餐厨房差,不过现在一些大型餐厅设备先进了许多,清洁状况都很好了

中餐廳主要傾向於猛火煎炸炒,除了大酒樓以外還有很多小店,我覺得大中國地區的餐廳都有類似的問題。你如果來過台北的話,你就知道台北出了信義區以後很多店面也非常衛生堪憂,杭州南路的牛肉麵餐廳,寧夏夜市的攤販餐桌,龍山寺附近熱炒店提供的餐具,甚至合江街附近的滷味店,油很黑的東山鴨頭,用金屬盆器盛放鹽水雞的移動攤販,數不勝數啦。甚至在我原鄉彰化那邊,很多豬血湯店的桌椅上有一層油,有的店夏天還會跑進來蟑螂。好一點的餐廳比如羊肉爐餐廳或者薑母鴨餐廳,店面裝潢很日式,其實進去看後就知道衛生其實也不夠好。
你懂个屁。中餐都是炒菜 油烟当然大。西餐没有stir fry 最多是个人用平底锅放少油加热 之后进烤箱 当然干净
欧美更注重专业和管理,但是灵魂还是口味,因为美食也是艺术创作。
