How did you prevent the meat from burning i.e. the bottom as it's facing the burning fuel, coal or wood whatever you used?

Hello Khan, I have the same trandoor and everytime I cook my walls are turning black and would not become white again. I usually burn the wood until it become embers and then start grilling the meat. What am I doing wrong ?
