MOUTHWATERING Slow-roasted Masala Lamb Leg Recipe In English

- This is my show stopping slow roasted masala leg of lamb, which makes a phenomenal centrepiece at any any feast, be it Christmas, Eid or any other celebration, the flavours will have you coming back for more. Its best served with roast potatoes, and all the traditional veg, the remaining pan sauces can be used to make a quick gravy, just add a slurry of cornflour to the pan and heat till the desired consistency is reached. The marination is best done 48 hours ahead, but can be done the day ahead, it's a low-maintenance alternative to Christmas dinner or traditional roast.

Serves 4/6
INGREDIENTS:
2.5kg leg of lamb on the bone
2 teaspoons of coriander seeds & cumin seeds
2 tablespoons salt
1.5 teaspoons cloves & black peppercorns
4 black cardamom pods
2 thumb sized pieces of fresh ginger
5 green chillies (optional)
1 heaped teaspoon of pre made marinade (pataks)
1.5 bulbs of fresh garlic
6 tablespoon yoghurt
10 tablespoons oil
hand blender, foil & clingfilm

Made this for Eid, it was first time doing a leg of lamb and i was worried but oh my god this recipe is amazing, the taste is 10/10 and the lamb was sooo soft. Adding this to my recipe collection for sure

How many people does a leg of lamb serve ?
@@krabiah3512 depends on your appetite but lasted us 3 days and that's a family of four - I'd say 6 people comfortably, if you've got other veg etc then it'll def fill you up. Was proper tasty, make sure if you make it you wrap it properly in foil to keep the juices in! :)

Thank you Jakir for your comment. Lamb on the bbq can be fantastic but it all depends on how you like yours. Rare, medium or well done. So timings will differ. In my recipe i used it's own juices to baste it in. I think I need to do a video at some point ☺️👍

This looks fantastic. I'm making this for Christmas day. Just came back with my leg of lamb. Hoping mine comes out like yours. Just alittle worried if marinade doesn't seep through and only sits at the top. Do you have a home made but easy dahi ballay recipe and recipe for chutneys, keema paratha, and easy to make haleem and samosas please. Apologises for the lengthy requests but your cooking is brilliant. I used to pay an aunty at the meat shop to cook and pack containers of foods for me. Your recipes are straight forward and easy to follow which is great. I've recommended you to my friends. Thanks so much
Hi Celina, thank you so much for your comment lovely! Just follow the recipe and it will turn out just like mine! Obviously most of the marinade will stay on top even though we made gashes in the meat but the longer the meat stays marinated the better the flavour will develop. I do have a few recipes of what you've asked of, Samose, Haleem & Chutney. They're probably not easy versions but are definitely worth it. I will be doing Dahi Balla recipe soon just before Eid and also Filo Pastry Samose! Do keep an eye out! Thank you so much for your wonderful feedback 😊👍

It was amazing but I think I did something wrong 😑 all the juices came out into the roasting tin and the lamb was a little on the dry side. But overall it was lovely and tasty. Maybe I should have put more foil around?? I will definitely do it again. Thanks again xx

I find with lamb leg that size, you can use all the marinade you want but it will never penetrate so deep to really get the full flavours you’d want (in the whole of the lamb). So i’ve always roasted mine with simple herbs and spices, and made sure there was always decent gravy to go with it.

I'll be honest I don't use any, as I don't like them. I make my own base masala and freeze it. I use this to make my own curries from scratch. If you want a quick curry check out my air fryer curries.

I’m going to try this marinade On butterflied lamb leg and then cook on a hot smoker. I think some cherrywood would work on the smoker

Salaam. This looks lovely. I must admit I am a bit daunted by it but you've made it look pretty simple. And sorry for the silly Q, but when you you shred and mix it up (at the end) what do you mean. Also, is the black cardamon overpowering. I don't like those!!
You would think it is overpowering, but it settles down once its cooked. Shredding is personal preference, but the marinade is only on the outer layer of the meat, shredding and mixing it will help mix the masala into the meat. You do not need to shred it up, but this way everyone will get some masala with the meat. I hope that helps.

I haven't tried that method so I'm.afraid I cannot say, but by wrapping it in foil and sealing it airtight, it will help it cook better and all the natural juices with help with the cooking process.

I am disappointed that in the end you could have shown the plated dish whilst you were tasting the meat. I wanted to see the different vegetables around the meat because that is the final presentation which comes on the table for your guests.
Thanks for your comment Shireen. The vegetables were just roasted potatoes, brussel sprouts and carrots just arranged around the platter with the leg of lamb on it. This can be seen right at the end before I tried it.

Same result is obtained by cooking at 180 C and 3 hours. Most chefs on youtube do this. Why waste energy?
That’s overcooked. Lamb should be medium rare.

@@MyLittleKitchenRecipes I did read and watch. It’s called a ruined leg of lamb. Basically It was steamed. This isn’t ribs that have a lot of connective tissue.
@@DrPriiime I have to highly disagree and get into counter perspectives. Even though I consider myself a medium rare person as well this isn't a ruined leg of lamb but a "Lovely" leg of lamb. I've never tried the Pakistani version but I've tried Greek roasted leg of lambs and they are pretty legit. The shank is fatty and the drippings render into the braising liquid and the hind leg absorbs the juices. Ofcourse it's technically steamed but if you brown or sear it 1st you can achieve similar BBQ grill results.
