    85g of butter for turning
    165g of butter
    Pistachio cream:
    400g milk
    100g cream

    40g cornstarch
    50g pistachio paste

    Do you proof the rolls in a steamed oven? And for how long do your proof? What temperature do you bake and for how long ?And what’s the size of the ring tarts?

      It should be in a temperature of about 75 degrees, and proof for about 2 to 3 hours. They are 4 inch diameter rings, and are 1 inch in height. You can buy the ring in Amazon. When baking, start baking at a higher temperature of 415 degrees for a few minutes. Then reduce the temperature to 375 degrees and bake for the remaining time. Depends your oven. Every ovens have differences.

      @@khn1992 make it to 5mm thickness. Roll it and mark, then cut about 1 inches.

    Hi @creativesweetness, This is amazing. Can you share which wieght of the butter to be put during the mixing and which is to be put to be rolled. Do you mix all the ingredients altogether? How long do you let the dought to raise?

      The way is like you make croissant dough. There are always two butter. One to make the dough that we will mix all ingredients together, another one you will laminate butter inside the dough. You give three turns, every turns you have to fold the dough and rest in freezer about 45 minutes. And about proofing I can’t tell you exactly because it depends on your room temperature you need to check and adjust. Normally proofing room around 27C-30C till double size!
