How to make Japanese Red ginger pickles, Beni Shoga recipe, 4 ways to dye in red

  • Japanese red pickle ginger (Beni Shoga) recipe. How do you make? How do you dye the ginger in red? I tried to dye in 4 ways. from pale pink to red, light to dark.
    you can chose the red colour what you want.
    the vegetable and fruits I used contains Anthocyanin, it's one of polyphenols.
    if you don't want to use food colour, please use vegetable and fruits.
    To make red ginger pickles (Beni Shoga) and Sushi ginger (Gari), we use New Ginger in Japan.
    new ginger has less shapness and skin is much thin. but itis difficult to get in London. so, I used normal ginger.
    you can boil the ginger if your ginger too sharp.
    also we use rice wine in Japan. rice vinegar has more depth then wine vinegar. but if you don't have rice vinegar, you can use apple vinegar like me.
    pat dry the ginger well before adding pickle requid, othwewise the taste will be dull.
    use red ginger for Japanese dish, such Okonomiyaki, Yakisoba, Ramen also good for salad.

      I make a loose rice dish with prepared veggies ( Gomuko no Moto )that my mom called it Osusi ( not sure how to spell it) and veggie sushi rolls :)

    Hi Tokie, thanks for your sharing. I live in Scotland and always looking for alternative and local produce to replace any Asian ingredients. I have made "Takoyaki" recently and thinking whether we could make the Beni Shoga at home and brought me to your amazing video. Cheers ❤

    You can substitute sugar with raspberries juice, pomegranate juice which will also gives colour😋

    I thought ginger would naturally turn pink in vinegar, without additional coloring?

      @@TaLeng2023 Hi, Thank you for your comment. In Japan we make Sushi ginger using New Ginger. New ginger has thin skin and more white-ish, also part of ginger (near stalk) is pink. So traditional pink Sushi ginger is pale pink. But Red ginger is you need to dye. In Japan we use Ume vinegar (made from red Shiso leaves) this is a byproduct of making Umeboshi, It's salted plum.
      I can't get Ume vinegar easily here in London. So made using vegetable which contains anthocyanin (red colour)

      Yes, you can make without sugar. There are many recipes not using sugar. Taste will be more sharp.

    Does the flavor of the ginger take on the flavor of the veggie or fruit dye?

      From these vegetable, My answe is no. But Sushi ginger I dyed with cherry bloosom, they smell of cherry tree. (I used flower and branch too)

    you can just get pomegranate juice to make it easier for you buddy...
