My boyfriend was from Belfast. He taught me to make these dishes, missing his country's cooking over my Italian foods. I never really liked any of them, but cooked them every Sunday for him. I lost him in a snowmobiling accident 10 years ago on the 11th. Strangely, I never stopped doing his Sunday favorites...and now they have grown on me 😊. I invite my neighbors we used to play cards with every Sunday to share our dinner.

Your comment moved my brother to tears, as he was really close to my bf. We set a plate for YOU tonight..even though you couldn't make it. My kitty Selkie..lol..loved every bite. She's a Scottish fold with an Irish name=she loves Irish stew and Concannon too! I fed 7 tonight, and kitty. Lots of leftovers too! Love your videos. Just discovered you! I watched the videos on Irish Soda Bread, Irish Stew and the Colcannon Recipe! Your videos are informative and entertaining! Ireland is my favorite place to visit. I have been there twice now....Northern and Southern Ireland. The people are so friendly. I hope to go back again sometime soon!

I prefer to saute cabbage in some oil/marg for a few minutes to really bring out it taste and keep its color before using it in a receipe!! Thanks for sharing your receipe as I like to see many ways to cook cabbage!!!
That's a great idea to saute the Cabbage Sandra.
I cook bacon pieces first, set aside, reserve some fat and add butter. Then sauté the cabbage and green onion a bit, leaving a little bite or crunch to the veg. Return bacon and proceed with heavy cream to finish. Love your suggestion!

Critical Eats Japan thanks for checking out the video. It's a popular dish in my part of Canada for St. Paddy's day (Newfoundland). Most people use kale instead of cabbage though.

BushwickBill thanks for checking the video out. A lot of people use Kale instead of cabbage but I was leaning towards cabbage because it's more authentic. I haven't heard of Champ. I'll have to look it up!

Use 125ml of milk or the consistency of your liking. Hope that helps!

Looks and sounds nice, but not the colcannon that I know and love. A good addition would be adding chopped fried bacon pieces which add lovely little savory pockets.

Jerry Fort the Beer Review Guy thanks man. Many years using a knife ha! A lot of people use kale for this recipe instead of cabbage but I wanted it to be more traditional. Turns out tasty especially when you have stew with it.

It's made with curly Kale not cabbage, it's made at Halloween, eaten with fried eggs and items are placed into the colcannon wrapped in tin foil or cloth like a ring, a rag, a coin etc and it predicts the year ahead for you,

It's basically pronounced kowl·ka·nuhn.
Did you cook it with no salt, or did you just forget to mention it?
I didn't cook it with salted water because the butter I used was salted and I added some extra salt and pepper at the end. If you salt the water the cabbage will absorb a lot of it so you probably wouldn't need to add any salt later. So you can really do either. Just give it a taste and adjust to your liking.

Here is a piece of advice: don't cut the stalk of the cabbage, it will help you hold it togehter when slicing.

Yeah that is an alternate version I have made with kale but grew up using cabbage which is also traditional. Both are tasty.
