    At 05:38, notice that meat (beef or pork) is often added to a tofu dish. Chinese don't think of tofu as a meat substitute. It's just another vegetable. Same for potatoes or corn, which do not take the place of "main food" (rice or wheat).

    You are doing a fantastic job and really getting into the Chinese culture. Your hands on experience in the kitchen shows that you are dedicated to your craft.     I use pixian douban often in making salad dressing. Quantity varies depending on how much vegetebles there are, so basically it is:
    - olive oil
    - sesame oil (much less)
    - tahini (sesame paste, tablespoon or so)
    - teaspoon of pixian douban (to taste)
    - soy sauce (actually Japanese shoyu because it is much lighter for a dressing than typical Chinese soy sauce)
    Whisk everything together very well.
    - fresh lemon juice, to taste (i use a bit less than olive oil, depends, I like it a lot)
    Whisk everything together very well.
    Do it a few times and you'll know the quantity of ingredients you want.

I'm defo gonna start to save for a food based holiday to China in the new-year. Can I ask, I don't speak a word of Chinese, how much of a hindrance will that be? LOL i'm expecting somewhat, although translation apps may help.

      Hi Simon! So nice to hear from you. It will be harder but you can definitely get by with a few phrases in a phrasebook when you order. The best places are the ones that tourists don't go to, so you'll have to find a friend through Couchsurfing or after you arrive to show you around, it'll make it much better.

    Hi, for some interesting and authentic Chinese recipes, I recommend you to try an App called "下厨房". Not everyone there is a master chef but everyone has their own way of doing things

    MaPo Tofu... probably my favourite Chinese meal ever. Close runner ups are LanZhou NiuRouMian, Sichuan Hui Guo Rou, or a pack of Niu BanJin. Thanks for making these videos.

    I wouldn't worry about the prep for Mapo Tofu. It's one of the most delicious and easy to cook dishes, so long as you have the ingredients. It's actually not hard to find Pixan Doban Jiang in the UK now. The only thing they didn't show is how the Chines tend to marinade the meat in ginger, soy sauce and xiaoxing rice wine before cooking. If you miss that step out it just won't taste the same.

    I wonder if Chinese cooks actually worship " *the kitchen god* " no offense but it just seems... nevermind. but their traditional architecture mixed with a little bit of modern is fantastic

      Probably closer to paying respects than actual worship. Though most cooks who are invested in chef-dom would at least have an altar to the Kitchen God in their kitchen. I think the practice is a bit more common place among the southern provinces and then diaspora in Southeast Asia/Hong Kong.

    This reminded me of my dad teaching me how to cook before I came to the us lol he would prepare everything and I just throw them to the pan and stir fry. When I actually came to cook by myself I realized that I didn't know how to prepare the food

    Hey Trevor - we had dim sum in Edmonton after watching your top dim sum eats video. We were inspired to go out and eat the real deal - not nearly as good as what you have over there, but not bad for the frozen North! Thanks for the great videos. Keep it up!!

    It's crazy how Indian, Chinese, Thai, and Korean cooking are all associated with chilies. They have become so ingrained in the culture you'd think they were native to the countries. They were introduced in the 1500's which makes me wonder what the food was like before this crucial ingredient. Same thing with the tomato and Italian food.

    Mapo tofu is one of my all time favourite sichuan dishes. Thanks for showing this vid! Honestly if I had to eat this every day with fresh steam rice I wouldn't complain its that good.... xD
