This is the Chinese old style delicacy serving, many different things in small portions. The cook is so skilled and his moves refined and elegant. The food configuration on the plates is so perfect that it's almost a pity picking it.

Actually Michelin granted some stared restaurant in China. But locals don't agree of their list. Because to locals taste a lot of restaurants should be listed but not. And some restaurant should not be listed was listed as star restaurants. I would say Michelin's criterion is some what biased.

It‘s a pity that Chinese food flies so much under the radar over here in Europe. There are many so called Chinese restaurants around, but most of them serve food that is far from being genuine. Loved this video showing a modern interpretation of Sichuan cuisine...even if I personally prefer the traditional style.

To be fair that happens everywhere not only with Chinese cuisine. Only way to get the genuine thing is by going to the place of origin. And if by any chance you find a place it will cost some money.
That’s true. Authentic Chinese food is so hard to find abroad. Just one thing that needs to be corrected. What the chef made in the video is actually TRADITIONAL Szechuan food. It’s called “governor food” (官府菜)which stands for dishes that are traditionally served to the nobles. Sort of like fine dining. It’s a different system from the commoner’s food (家常菜). It’s a pity that Chinese fine dining which represents so much of Chinese culture and philosophy has been absent in presence in most oversea markets.

开水白菜 is a broth that is made through few hours of boiling, aged ham, duck, chicken and minced pork. Despite all that, it stays clear like water, which is why it's called " cabbage water 开水白菜 “. Not upgraded chicken broth 😂 a Chinese die somewhere every time you say that lmao
I actually laugh when I heard "upgraded chicken broth" lol, "Cabbage water" is one of the most difficult dishes to master even for an experienced chief in the world, the broth takes 4-5 hours to made in order for the color to change to transparent. Tai Hao Le! I actually used to eat at Yuzhilan Restaurant a lot when I was in Chengdu before! All I could say is the dishes there were just perfection! I really enjoy the abalone there! That was very costly but so delicate and tender, so definitely worth it!

开水白菜 is a broth that is made through few hours of boiling, aged ham, duck, chicken and minced pork. Despite all that, it stays clear like water, which is why it's called " cabbage water 开水白菜 “.

I actually laugh when I heard "upgraded chicken broth" lol, "Cabbage water" is one of the most difficult dishes to master even for an experienced chief in the world, the broth takes 4-5 hours to made in order for the color to change to transparent.
The end result: The dish loos like normal water boiled cabbage, but the favor of chicken, ham, duck, pork are mixed in in harmony in every bite of the cabbage

Tai Hao Le! I actually used to eat at Yuzhilan Restaurant a lot when I was in Chengdu before! All I could say is the dishes there were just perfection! I really enjoy the abalone there! That was very costly but so delicate and tender, so definitely worth it!
