I’m british cebuano myself, used to live there before as a kid and honestly you fit in cebu like a brick in the wall (you remind me of myself haha!). Not being biased but after all my travels in the Philippines, cebuanos are also one of the nicest youll encounter, theyre actually also known for speaking english compared to other places. Also yes you did do it correctly by mixing the soy sauce and vinegar together, thats how people have their dips there everywhere in cebu wheras in manila for example they have lechon with liver sauce or mang tomas as its called (doesnt taste anything like liver tbh). But the fact that you like vinegar with everything, well then cebu is for you! I was there two weeks ago wouldve been great to bump into ya and your you around! But either way Google is your best friend! Enjoy max! :)
Puffer or globefish is called fugu here in Japan... Expensive and depends on the kind especially when u eat them in fancy rests.. Winter is the best season for eating it here be it sashimi, karage/fried, or hot pot..

To be honest it doesn't matter who u are if you're not from the area, then they will hustle u. Even their own people. Cause I'm filipino myself and when I visited the Philippines and I speak tagalog, but I'm not from the area. They did hustle me too. But you know what. It's okay. Eventhough it sucks but if you live in state for very long time and you see how much the dollar compare to pesos , then I don't mind giving extra cause I know how hard life is there. But not all pinoys do that there. I give extra money for those whos honest with me.

Hi Max, getting back to your previous videos and watching these soups and kinilaw made me so hungry. That’s how we Cebuanos loved the natural taste of the sea foods, not much different spices. Simple tomatoes and chili peppers to enhance the natural sea taste. You should try the grilled jaw part of the tuna fish. It’s very popular in Cebu and Mindanao like in Gen. Santos, noted as the capital tuna of the Philippines. We exported to Japan, US and Europe. You love danggit too? You’ve got a Filipino taste buds. 😊👍. By the way try to go to Sutokil Resto. Check google. It’s very popular for Cebuanos.

"Dang-git"as it is locally pronounced or any other dried fish they sell in that market is usually flash fried in hot cooking oil... for danggit my experience is like 5to 10seconds or less depending on the dryness of the fish on standard 350 temp oil, then let it rest on a fry rack for a min.. prep some spiced vinegar and fried rice..plus egg and boom you have one of the best breakfast meals in the Philippines.
