The tapioca recipe is how factory’s make them, this is just an alternative that dosent work as good but it’s the same concept like your not getting the gummy texture it’s more of a dough
1. you're not supposed to make the boba too big , the boba will expand in the boiling water and the middle will be raw that is why y'all will taste flour. and also while boiling , let it cook on high for abt 15 minutes , then close the fire and put a lid on the pot , so that the middle will slowly cook , and again , so that it won't taste like flour 😵 2. also , while rolling it into balls , cover the rest of the dough with plastic wrap or plastic , so the remaining dough won't dry up 3. 3:02 don't just fill it up halfway , fill the pot up to ¾ of the pan , because water will eventually evaporate and the boba will end up sticking to each other. 4. 3:32 making brown sugar syrup , y'all should put 2:1 ratio of brown sugar to water , withOUT putting regular sugar , that won't be BROWN sugar syrup anymore 5. 4:43 making whipped coffee , i suggest putting the mixture of 2tbsp of water 2tbsp instant coffee 2tbsp white sugar into a plastic cup (it's better than glass cup) and use electric or whisk to whip it up in the cup , that whips like 10x faster. abd also don't ever ever evERR use ground coffee , it won't whip up , and you'll end up with like- water. with chunks of coffee bits. and the whipped coffee must be in stiff peaks , just like meringue , it you can put the cup on top of your head and nothing will come out. soooo , in conclusion , don't make boba from this video , i am sorry , if you want to make like- real boba from starch , watch nino's home recipe. 🙆🏻♀️🌼

Thi Thi Nguyen (sorry for my English but is not my first language hehehe) it happened to me too, and after few attempts I understood that the problem was the water. You must let the water boil very well because if the water boil just a lil bit it will dissolve so let the water be super hot and super boiling and it won’t happen and plus just don’t stir them and let them float because when they have contact with the hot water they kinda create a layer that don’t let them stick (but if you see that the boba becomes to stick to each other stir them gently so you don’t dissolve them) I hope that you understand what I meant ❤️
