Note to anyone here: milk tea is traditionally made with milk added to the tea, which is the temperature you prefer, then shaken/stirred, and this is going to give you a lot more tea flavor as well as flexibility on how much flavor you want. Infusing tea into hot milk may sound like a good idea, but in actuality, heating the milk hot enough to infuse any flavor from the lose leaf tea is going to be too hot and end up scalding your milk, giving it an undesirable cooked flavor rather than a nice and fresh cream flavor. Also, trying to use loose leaf tea in milk is just not going to extract much flavor due to the milk being heavy, and again, you want whatever liquid being used to be hot to extract the most flavor, but you don't want to be keeping your milk at such high temperatures for so long.
@@ayesha9792 watery as in texture wise? Or watery as in flavour wise? For texture, just add more milk, for taste, leave the tea bag in the boiling water a little longer. Thanks for the awesome video! I've made both the Earl Grey and the Matcha now. Some tips for viewers: 1 cup of tapioca starch/flour total. You can find that in the recipe he provides in the description. I just add it all at once slowly after I bring the heat down and it seems to do the same for me. If you get oobleck when you should have dough and it all seems hopeless, put it back in and cook it on low heat for a little while. If it is crazy sticky and you think you've added enough tapioca, add a bunch more tapioca and you will be surprised that it will become better. I mean a bunch. If you have a lumpy mess, you added the starch too fast without mixing well or you had it too hot. Just try again. Take his advice and reheat the dough when it seems to not be rolling well. I dip my hands in a little water too while rolling and that helps also. + His advice on using ice cubes really makes a difference. Definitely give yourself some time to do this. I've never made these before and thought it would be fun to give it a try. After making endless amounts of sweet oobleck for my kids to play with (twice) I discovered that you need to cook the first half of the tapioca flour over low heat until it starts to gel just a little bit. Worked great after that!!! So yummy!!!! :)
I'm so glad you shared this because I just finished round 1 of oobleck in my kitchen 😂 Hopefully round 1 gets me some tendy wendy boba balls instead lol

You don't know what you have done. Ever since I saw this video, I have only been making my own boba tea 🍵 . My friend who loves boba always asks me to make it every day . The power is 🔥🔥🔥
I finally took the time to make this. overall, very good. But I learned a few things about this recipe: 1) the amount of starch is listed in the link, not said in the tutorial 2) if you don't have an extra pair of hands to help you make those pearls, set aside a couple of hours, it's very time-consuming 3) if you're going to cook all those tapioca pearls at one time, use a much bigger pot and don't let them boil without stirring often. I lost about 20% of my pearls at the bottom of the pot, which was a beast to get clean when I was done because I didn't stir (and I knew better, was being optimistic/tired from all the boba pearl rolling) 4) Twinings makes Earl Grey k-cup pods. I didn't know I had bought pods instead of regular tea bags until I opened the box, ready to make my tea (thankfully, I had a tea infuser, so I just poured it in there.) All that said, now knowing what to expect, I will definitely make this again, but I will devote a day simply to making the homemade boba pearls. This recipe makes a fair amount, but I love extra boba in my tea, so while I have all the ingredients/materials out, I may as well make as many as possible. Thanks for posting the recipe. And I enjoyed your presentation. Fun! 🙂
Hmmm, yum. Made the matcha and brown sugar syrup boba today and my family loved it. I didn't make the boba pearls from scratch as I didn't have tapioca flour on hand but I did have tapioca pearls that just required cooking. Also added some cream to the milk to make it extra deliciosa 👌. So good.
Here’s the thing, today is the first day that I’ve tried boba. I had the original black tea boba drink and a lychee one, both were absolutely amazing. Since I love tartness and floral flavors, the lychee was by far my favorite. And like you mentioned, there are bad and mediocre boba shops out there from what I’ve heard, but thank god that my first experience was awesome. Tender pearls, sweet beverage, etc. Not to mention, but their Takoyaki and yakisoba are to die for.
Idk but as an asian guy, seeing josh making a lot of asian food especially making phở somewhat right way from a few vids before made me really respect this dude more. Imma give you an asian card.
CAUTION: I tried this recipe twice and every time the dough is too dry and brittle. I suggest adding 20-30ml more water. Then it becomes more malleable and easy to work with. If not for the added water, it just falls apart into a crumb fest.
Yeah the amount of water you need will vary depending on what brand of starch you're using ^^ When I make boba I usually start off with a small amount of boiling water, then add splashes of boiling water until the dough becomes workable and a bit like playdoh in texture.
@BORIS Zafirov As with any dough, the amount of water-to-flour ratio will depend on many factors, including the temperature of the room and the humidity of the room. So toss your caution - Joshua did just fine. Perhaps he could've mentioned that you may need to add a little more flour or a little more water, yes, but _for him on that day,_ that was the right recipe.
When I was living in the Philippines 20+ years ago, before the boba craze, we used to buy the uncooked pearls from the supermarket. Boil them until al dente (by this time the water has reduced), add brown sugar. Add some leaves of pandan. Cook pearls until done. It would smell so nice in our house. Here in the US, you can use vanilla in lieu of pandan.
This is the first video I've watched from you, and all I can say is well done my dude. Your transitions are immaculate, just like your food. The cabinet for opening and closing statements is my favorite part btw.

I feel like bobba will be the next big thing and I'm so ready I've been cooking my own bobba since the beginning of the year and I find that you dont really need to work on the stove or with any heat at all, I get perfectly fine results with just mixing tapioca starch and brown sugar syrup/Fruits (!!!!!) with my hands and if it gets too stiff you can add more water and knead it a bit. Also bonus tip you can also soak your bobba after boiling in honey instead of the brown sugar syrup and it's absolutely amaaziingg!!!!

Hey papa, would we ever get a series “but quicker” where you make things that normally take ages to make but in like 30 mins. It’s exam season and I want to eat well but time is of the essence
Normally things that really take a long time, can´t be made faster at least not without extrem loss in quality. I think the series is a good idea but maybe with recipes that take like 30 mins by default.
There's a lot of things you can prep in advance and whenever you feel like you want to eat them you just take out from the fridge, reheat then assembly it,and you can have your own quick and decent meal, imagination is the only thing limited yourself
Things like stew and braised item you can make a big batch , portion it, then store inside your freezer, whenever you want to eat, just pop it into the microwave, you still getting the same result as fresh one,or even better since those slow cook item will further develop their flavour after you Cook them

I failed three batches as well- used a whole bag of tapioca starch to make oobleck. The issue is after adding 1/2 the tapioca starch to the boiling water/sugar, you need to cook on low long enough to get a shaggy dough started- for me it was more like 30-60 sec instead of 6-8 sec. Then add the second half of the tapioca. Don't cook too long though, if you're seeing transparent bits, you're going too far, get it off the heat asap.

I love how this channel is very much "Support your local restaurants" and "Make it yourself", lol.
Sooo true. You originally saved my first batch I made a long time ago as well.
You can just cook the whole thing on low for a little while and it will dough up. Thanks for saving my money!

You don't know what you have done. Ever since I saw this video, I have only been making my own boba tea 🍵 . My friend who loves boba always asks me to make it every day . The power is 🔥🔥🔥
My I come too love boba, in Toronto here its very expensive :((
I finally took the time to make this. overall, very good.

Just wondering (if you made this recipe) Does this make only make a drink for 1 person or 2 people

You are a genius! I’d travel from out of state just for the experience. 😎
CAUTION: I tried this recipe twice and every time the dough is too dry and brittle. I suggest adding 20-30ml more water. Then it becomes more malleable and easy to work with. If not for the added water, it just falls apart into a crumb fest.
Then I added too much water and it would quickly turn into a puddle
It could be the brand of starch you're using, cause I followed your instructions and got a sticky mess that took lots of flour to fix.
Yeah the amount of water you need will vary depending on what brand of starch you're using ^^
When I make boba I usually start off with a small amount of boiling water, then add splashes of boiling water until the dough becomes workable and a bit like playdoh in texture.
@BORIS Zafirov
As with any dough, the amount of water-to-flour ratio will depend on many factors, including the temperature of the room and the humidity of the room. So toss your caution - Joshua did just fine. Perhaps he could've mentioned that you may need to add a little more flour or a little more water, yes, but _for him on that day,_ that was the right recipe.
how much does he mean by half of our powder because I did 1/2 and then 1/2 and just ended up with too much

Tapioca it's so versatile, y'all need to start doing more with it. I'm brazilian and we make tons of things with it.
You can also add food colouring when you're initially cooking the dough on the pan to make it whatever colour you want.

The gradient colour of the matcha tea when he was stirring it.. it looks so good and delicious! 🧋😋

Hey papa, would we ever get a series “but quicker” where you make things that normally take ages to make but in like 30 mins. It’s exam season and I want to eat well but time is of the essence
Normally things that really take a long time, can´t be made faster at least not without extrem loss in quality.
I think the series is a good idea but maybe with recipes that take like 30 mins by default.
that'd be a cool series! I think Emma's Goodies has some recipes like that; like making cinnamon rolls that can be cooked in a microwave.
There's a lot of things you can prep in advance and whenever you feel like you want to eat them you just take out from the fridge, reheat then assembly it,and you can have your own quick and decent meal, imagination is the only thing limited yourself
Things like stew and braised item you can make a big batch , portion it, then store inside your freezer, whenever you want to eat, just pop it into the microwave, you still getting the same result as fresh one,or even better since those slow cook item will further develop their flavour after you Cook them
It all about time management

Papa we failed, please forgive us for we have sinned. We're gonna use storemade boba next time. We spend 5 hours making it and the end result is gonna be a (fun) disaster
