Warm Blackberry Cobbler with Vanilla Ice Cream
Indulge in the sweet taste of summer with this homemade blackberry cobbler, made from handpicked berries straight from my backyard. This easy-to-follow recipe creates a dessert that’s bursting with juicy berries and a golden, buttery crust. Served warm with a scoop of creamy vanilla ice cream and garnished with fresh berries, this cobbler is the perfect blend of sweet, tart, and buttery goodness-ideal for family gatherings or a cozy night in.

HERE IS THE RECIPE-
INGREDIENTS: Serves 8-10
**make a compote':
5-6 c fresh/frozen berries -cook for 3-5minutes with
1c sugar
**make a slurry :
2tsp corn starch
3tblsp cold water
Add slurry to berry mix and cook for 3 more minutes.
** Optional topping : mix together
3tblsp brown sugar
1/4 cinnamon pwd
** Pre-heat oven to 350°F
Melt 1/2 c butter in 9x13 baking tray
**Dry mix:
2c- all purpose flour
2tsp baking pwd
1/2-3/4 tsp salt
1c sugar(1/2c white, 1/2c brown)
1/8th tsp cinnamon pwd
1/2 c softened butter
**Wet mix:
1 c hot/warm milk or water
1 tsp vanilla extract
Cook berries with sugar and corn starch slurry and set aside to cool.
Melt butter in a baking tray for 3-5 minutes
Combine all dry ingredients together with 1/2c butter to form a crumbly mixture.
Pour wet ingredients into dry and mix well to make a batter.
Pour batter onto the baking tray with melted butter.
Scoop and randomly ladle the berry mix onto batter . DO NOT MIX.
Bake at 350°F for 25 minutes. Remove from oven and let it rest.
**Optional topping:
Sprinkle the brown sugar and cinnamon mix and bake again for 3-5 minutes.
Serve warm with a dollop of vanilla ice cream and garnish with fresh berries.
