I have found it helps to cool the meat in the fridge awhile before adding so it doesn’t wilt the lettuce. I make small cubes of cheddar cheese and use cherry tomatoes. Add some garbanzo beans & kidney beans. I use a TBSP of Miracle Whip to hold the salad together and serve with sour cream and taco sauce and have different salad drsgs available.
We love taco salads at my house. I also add kidney beans and black beans as an option.

I use a cup of rice in this salad it kicks it up a knotch with the ground beef mixture. Your version alone is perfect but we make it as a dinner meal and the cup of rice added in is the bomb. Make sure to add the rice into the ground beef mixture so the rice can absorb all the flavors then add to the rest of your recipe and you have an awesome dinner meal. Catherine I love all your recipes you make cooking a meal for my family so easy. I've just always added rice to this recipe bc my aunt who is from Mexico taught me to make it that way and it adds a layer of flavor and makes it go further if you are feeling a big crowd like she always did. I was always sitting at her table when she made Mexican dishes which was often lol.

I remember this as a kid, Mom would make it fairly often. She would use the “Taco” flavored Doritos until they discontinued that flavor. Doritos has just recently reintroduced the Taco flavor, & I bought a couple of bags for Moms taco salad.

If you leave out the lettuce, you've got Beef Ole. My college cafeteria made it every week. I loved it. It was interesting that so many students complained/joked about it, while noticing lots of people choosing it. I think the cafeteria did include red and green bell pepper with the Doritos on top and maybe inside too. Hey. That's Catherine's Doritos casserole. lol Just different names.

I Learned how to make this (at a Deli Store intown I stared working when my son was a baby 20yrs ago. So they have been making this Recipe for way over 20+ years & Everyone still Loves it) kinda the same as u but w/ a few changes. At the Deli they would teach me to mix the Taco Meat, the Cheese, the Lettuces, Doritos, & Fenches Salad Dressing & then Mix it all up. The Deli still makes it this way & They Still Loves it & My Family does too. :)

I call this Texas salad 🥗 😋 I use Catalina dressing thought and rinse a can of Ranch Style beans instead of corn . Works great with Fritos also 👌 👍

I am a Nacho Dorito lover.
Instead if paper towels, add stale heals of bread in the pan to absorb excess grease. Throw the grease-soaked bread outside for the birds.
