- How To Safely Make Tonic Water At Home
Welcome Friends! Today in the kitchen we are going to make tonic water, and I know that as soon as I said tonic water there's probably already people writing comments down below about how dangerous
this is. You know what; they're probably right. It is a fairly dangerous, it is fraught with difficulties. One of the reasons that this could be construed as a very dangerous thing to make is that the main
ingredient is cinchona bark. Cinchona bark contains quinine, and too much quinine for certain people will cause problems.
This is not a covid-19 cure, treatment, or medicine. This is not a Coronavirus cure, treatment, or medicine. This is not the same as hydroxychloroquine, and can't be used to treat or cure covid-19 or coronavirus.
Ingredients:
750 mL water
3g - 4g cinchona bark, chopped, not powdered
9g gentian root, chopped, not powdered
18g citric acid
5 mL coarse salt
2 cardamom pods
5 allspice berries
8 black peppercorns
2 small star anise (optional)
27g fresh lemon zest
27g fresh orange zest
12g fresh lime zest
15g fresh lemongrass (chopped)
1Kg sugar
Method:
Add all the ingredients (except the sugar) in a pan and bring just to a boil.
Partially cover and let it simmer 8-10 minutes.
Strain through a fine mesh strainer and then pass through a fine coffee filter.
Put this liquid back into the pot with the sugar, and heat to just below a boil.
Stir until the sugar is fully dissolved.
Chill and store in an airtight container in the fridge.
If you will be storing for more than a week, add 30 mL of vodka.
Mix 1 part Tonic syrup, with 8 - 10 parts carbonated water.

At 6:00 you see, that you clearly ruined. Maybe skip ALL the extra spices. Make basic real tonic first... looks like extra spices ruined it. Try adding zest after boiling. Remove from heat, put zest for 1 min and pour trough sieve. m.ruclips.net/video/ZGN42mb5ehI/видео.html
The "extra spice " flavours comes from mixing with gin. Not from adding spice to tonic. That's why gin&tonic was invented, to give tonic nice flavours from good quality gin.
My grandmother upon feeling a bit sick would get a bottle of tonic water and have a glass a day untill the sickness passed. She lived to 92 with very little sickness in her life. I think we have forgotten too many tips from the past to help us stay healthy
Anyone else get the feeling Julie pops into these videos after a hard days work at NASA?
Does she really work at NASA, or do you just mean she looks like a "rocket scientist"? Because if she does work at NASA, that would just be perfect!!! Lol! Although, I don't know if NASA would have facilities in Canada. But then again... what do I know? If NASA were smart they would. Ha!
lmao .. fits perfectly
she works at CANASA™
@@MichaelScottPerkins NASA is an American space agency they're not in Canada but we do have our own space agency and our own astronauts actually rather good ones as well we work side by side with NASA. NASA is a thousand times better though admittedly.
And CANASA is working hard to send the first person on the noon to say 'sorry!'.
I absolutely love this channel. I love the part in each episode where the lady, who I assume is your wife, comes in for the tasting. The way you two talk with one another is wonderful. You are not over-the-top annoying, as if you're trying to "sell" something... instead, I really do get the feeling that you two live in my neighborhood, and I could pop over and see what Glen and his wife (Julie?) are up to today. It's kind of like... a very modern Mr. Roger's Neighborhood, but for adults.
They do make a very handsome couple. Best wishes to them.

Thank you for starting with a warning!) Very responsible of you
I am "addicted" to the espresso tonic, but currently with a war raging in my country, there is a shipment problem 🙃 No tonic for me this summer~ BUT I've got a blend for brewing tonic and I really needed a tutorial like yours to get me through the process) Hopefully it turns out delish ;)
Glen says perfect.
Glens face doesn't.

That's the beauty of Gin and Tonics. Your body knows it's bad, your mind knows it's incredible.
oy vey.
Anyone else find it satisfying watching and hearing Glen spray the carbonated water?
I still love a simplified version of your Kahlua. (in quart jar: 1 cup coffee grounds, 1 Tbs vanilla, 1 Tbs cocoa powder, 1 tsp cinnamon and fill with high proof spiced rum... steep for 2 days.... strain.... add syrup of 3/4 cup water and sugar). Everybody loves it. Thank you.
I love tonic water. sometimes I just drink it on it's own with lime, or lemon.
Cocktail recipes should drop on Thursdays so people can get the ingredients to enjoy Friday.
Yassssss
NorthWoodsDiver or you can just have it now and be ready for next weekend...
I know this is a year late, but I couldn't agree more! 🙂 Also, great video Glen! I made homemade tonic water as well, but I love all the flavors you incorporated, great job!
What about enjoying Monday thru Wednesday :p
Thank you for been honest about the bark I can't get it anyway. I use Grapefruit and lemon skins. Lime sometimes.
Hello Chef Glen and Julie 🙋🏻♀️ I guess you’ve solved the dangers issue by simply using the main ingredient in small amounts in chopped form instead of powdered one👍you are a Bless❤️❤️ so proud I found your brilliant channel🤝based on quality not quantity👍Thanks a lot for sharing 🙋🏻♀️🌷🌿💕
I do it pretty much the same way. I use different spices for my personal taste, but I'm also using the juices from orange, lime and lemon. But I will try it this way.
Some people may experience allergic reactions to quinine. If this is the case, a person should avoid tonic water and any other products that contain quinine.
People who should avoid quinine in medications include:
• women who are pregnant or breastfeeding
• those with abnormal heart rhythms
• those with liver or kidney disease
• those with low blood sugar
Some medications can interact with quinine. These include:
• antidepressants
• antacids
• statins
• blood thinners
• neuromuscular-blocking drugs
• antibiotics
• seizure medication
The recipe is interesting and the health warnings and link to a webpage are very helpful. The health effects can be serious if the advice is not followed, but this recipe appears to be very safe. I look forward to the cocktail videos coming in a few weeks.
Glen in visible disgust: ITS PERFECT!
It's an acquired taste LOL! XD
Can you show us how to make birch beer? It's a Pennsylvania favorite!
5:52 "talking aboot this" I'm Canadian and that's the first time I'v actually heard someone say aboot.
you could make a high potency bark extract and give it to a pharmacy, university or Pharmacorp for a gc.
the dosage of a liquid is a lot easier and safer than powder or shreds.
Homemade tonic is awesome! Thank you, I've always wanted to try it - I luv tonic as a drink it's so refreshing!😎💣💥👍👍 You DO rock Glen!
Mmm quinine, I feel my malaria already beginning to run scared.
Daniel I Cats not allowed are to Yodawater with Quinine added.
Hi Glen, great videos! I was wondering how to get the different roots and barks (and the cheese culture for cheese curds!) in Canada. We live in Western Africa, but we have people coming from Quebec in January. Thanks!
It looks so beautiful while it is cooking!
4:55 The reaction you give your significant other when you taste their "Tuna Surprise".
I Lost your channel and just found It again looking for tonic water. I remember your soda video started my appreciation of your work!!! So happy rn
Quinine glows under black light. You can see how intensely quininated your tonic water is and adjust by bark infused water to tune it. I guess
DestroManiak whoa! That’s so neat!

Seems like thats a lot amount of sugar to be honest...
Far and away my favorite tonic water is Schweppes, both for its flavor profile and for its pinpoint carbonation. Getting the carbonation right when making/mixing tonic at home would be my biggest issue.
I'd like to see a recipe the traditional Victorian way - carbonating this in the bottle with citric acid and sodium bicarbonate.
You are an international treasure!
Glen, I know you've done carbonated water, but how about a club soda recipe? Im not sure how much sodium bicarb to add or other minerals....Storebought club soda to me here in the US is pretty lame. I don't drink alcohol but love a good club soda. Cheers friend!
Yes .. please
Is there a difference?
@Jeff Webb they dont have lee and perrins in the states? that's surprising I always thought it was just THE brand of worcestershire.
@@nathanaellove2392 The brand is here and it's the main worcestershire sauce on the market but I've heard they use a different recipe for the US market.
Fantastic! Been waiting for this one for a while. Keep up the good work Glen
Thankyou - you are amazing! Love your channel and delivery. Give us all the details
I just made this. This is really easy and only took 1 hour from start til I gave my wife a drink. She likes it. I think It needs more cinchona as i like the classic tonic taste. I will try again.
Hi Glen. Great video. I made it and my family loves it. Still need to fine tune the recipe. Somehow this was a common question from every one. Is there a way to clarify it ?
Clarification tablets like those used in winemaking and brewing or a few drops of pectinex might do it without affecting the flavour profile significantly. There's also bar techniques like using agar agar or gelatin, but I'm not sure if (or how much) they'd soften the profile of something like this.
Greetings Glen! The one thing I keep asking myself and I'm sure there are others that ask the same questions to themselves is can you formulate a cola or a soft drink or even tonic water using an artificial sweetener. Alcohol itself is loaded with a lot of calories. I use the tonic water, a 4 oz chilled glass to relieve leg cramps especially when I am working all day and on my feet all day or if I am on my knees doing gardening and have shorted myself accidentally on hydration. The tonic water which is diet which I buy at Wally's World for $0.98 a bottle in the US will relieve those cramps in just a minutes. Yes it is the quinine and you actually have to limit yourself to the amount especially if you're going to be combining it with mixed drinks that may also have tonic water in.
Have you ever noticed that when you sit on Old bar stool for any length of times you also get leg cramps. You think it has something to do with the selling of the quinine products? I used to work at evening Supper Club. And the owner taught me about this and how to spot people that are in need of a small dose of quinine. That especially when you're on your feet all day many people tend to develop the agony of leg cramps in the evening after work after they sit down to rest. Nothing worse than waking up in the middle of the night experiencing the leg cramps after an active day. So I always keep a bottle or two on hand for a quick shot to gain relief. If you are a chronic leg cramp suffer talk to your doctor about the use of tonic water. Remember the dose is 4 oz of DIET commercial tonic water better if chilled. I love that grapefruit flavor and it makes it go down easier. I don't know what gives it that flavor if it's the quinine itself or the root you mention if it's some added ingredients. But it's something that I always have on hand. I have to do research to see if that root is available here in the United States.
I'd like to add that I have tried making several of the products but never got further than trying to get the ingredients, Neroli oil. It is so expensive here in the United States not that it's used in tonic water. So I ordered it from Canada and lo and behold I got a letter from the Customs Inspection Department telling me that I was not getting my order of my Neroli oil. Contact them, I did. I was told by an agent that it is on the homeland security list of prohibited substance to be imported into the United States. I asked the agent if we were talking about the same type of flavoring used in the production of soft drinks. the agent could not tell me. All they knew was that it was on a list that was produced by Homeland Security as a costic solvent. I ordered 5 ml at 20 dollars plus shipping. No license or accrediated credentials, no product. I still searching for someone in the United States who has the product for sale.
I thought that carbonated water, club soda, seltzer and tonic were the same thing! 😅
Carbonated water aka seltzer water is simply water with dissolved carbon dioxide in it. Club soda is a form of unflavored carbonated water with potassium bicarbonate, potassium sulfate or sodium citrate added to replicate constituents commonly found in mineral waters. :)
those first three are functionally the same thing, but tonic water is closer to regular sodas since it's both strongly flavored and sweetened.
@Wu Me I think it's a personal taste thing, i've only mixed drinks club soda, San Peligrino, and Topo Chico and had San, Topo and Perrier straight preferring San and Topo over Perrier mainly because in the last few years it doesn't seem to be as clean tasting with it almost being a touch soapy like the bottles were washed with ivory and rinsed poorly. Club is good for mixing if you want something completely clean but with a mineral hint like scotch and soda, then San. San then Topo if drinking straight though Nash Finch (now Spartan Nash) had a nice mineral water that was bottled in italy and imported and sold under the Nash Brothers brand.
@@Paul_K_ I forgot to mention the sweetened part in my reply, glad you mentioned it.
If your having leg cramps or chalie horses drink a few onces tonic water & it immediately disappears..Thanks for info.
Quinine quite literally allowed the British to dab on their tropical colonies without being BTFO by malaria.
... and the the gin made the colonizing so much funner.
That face you made after tasting the unsweetened liquid; hahaha! Probably the first time I've literally laughed out loud while watching one of your videos! :-)
the face was one thing but the comment after this was perfect! Like in a movie when a character is hurting but has to pretend that everything is peachy :D
Agreed with earlier comments. Drop the cocktail recipes Thursday nights so we can all try them on Friday! :D
Cheers, now let's check if the quinine fluoresces in the glass.
Would Bergamot be a good ingredient for the bitter and citrus taste?
Very interesting video! I like when I learn something new!
4:55 "It's Perfect!" ROFLMAO
I followed your video instructions and made some homemade Tonic Syrup. It turned out perfect, however, I have a question: I would like to make my own soda water using my Soda Stream. I will be carbonating the water in 1 quart bottles, and then add the Tonic Syrup to the bottles after carbonation, so my question is, "How much Tonic Syrup should I add to the one quart of soda water to be within safe limits?"
Is bitter lemon available in Canada? If so you should try to make it. It has quinine
Great video love it! I was wondering what is the brand of your soda gun? I've been trying to find a simple one just like yours for some time now. Do you still read your comments sir? :D
What brand of saucepan do you use in this video? It's beautiful!
Calphalon.
Need to try this, just without the sugar, should be interesting ...
But...does it glow under UV light?
@David Builider That wasn't the point of the question...copy pasting from the internet doesn't help anyone here...
Just tried it today, it has a slight taste of bark but it good overall
Thanks for this. The only reason I would want to make my own tonic is to produce a non sugar product, using a natural low carb sweetner.
Thank you & I'll like to Make it to Taste at Home !!
Very cool video, I would love to travel Canada then the world to see as many peoples version of a vodka ceasar I can find, maybe wings too lol, keep up the great work
Great video as usual, really looking forward to the cocktails series :D
Hello glen i have struggled for 3 years to figureout a way to get clear quinine powder looks like the beverage makers use a very tiny amount of pure quinine and use bitter orange extracts to flavour the tonic water.
I love the beautiful matte finish dishes you always use - where are they from?
Just buy some bitrex and you'll have a lifetime supply of tonic water. That thing is so bitter that a grain dissolved in a gallon of water is too much
I am so glad I found your channel!!
I think the amount of sugar in there is the most dangerous of all.
Could you please show us your setup for soda water, (carbonation setup)
Sure - we made a video a while back on our channel: ruclips.net/video/9vRaJY3d47o/видео.html
Next week on CNN: man dies from own tonic water
I suffer from dreadful cramps and find that hsving a bottle of tonic water with me all the time helps.
cool.. does it glow under black lights? I have very fond memories of midnight bowling as a teenager where they put tonic is most everything because it glows.
Nice pans. Anyone idea what make pots and pans he uses ?
They are Calphalon
@@GlenAndFriendsCooking Thanks. They look the business!
I think you are pretty safe. Leg cramps were historically treated with 200 - 300 grams of quinine. I doubt you extracted anywhere near that.
Yeah it'd be a neat trick to extract 300 grams of quinine from 4 grams of bark.
300mg (NOT grams!) is the lower end of malaria TREATMENT. Leg cramps don't need that much.
What's in the oven glen?
4:55 it's horrible but is perfect hahaha
Did you update the discription box abt the covid19 ?
Thank you I thank you but I want to know where do you find the ingredients
That face.... "Its perfect!" :D
Nice, I'm going to try your recipe
I'm struck by the fact he didn't make like a couple of gallons. seems like a lot of work for very little liquid.
Also, I disovered that quinine lowers blood sugar itself, so the added sugar is probably barely balanced, by it.
I have a question, could you boil all those peels for a tremendous whole Vit C boost, by itself.
Quinine is good for muscle spasms
So is quinine only an issue for those with conditions or on certain meds? Or just too much is bad for anyone?
Yes
Chelsey Abbott It’s dangerous if you’re pregnant, or on certain meds, but for healthy individuals, like anything else, moderation is key
Quinine is medicinal. Maybe it was made strong so that it could be diluted later on.
Jebus, with that much sugar, you made jam.
snipper1ie if you actually bothered to watch the video he dilutes the final tonic with soda water
Cocktails, here we come! Cannot wait!
The autosubs keep saying Chinchilla bark.
Now all I can see in my mind is a Chinchilla the size of a dog. And all I can think of is how soft that little bastard's ears would be.
A tonic water "extract" or "syrup?"
he basically made it to a syrup so he can mix it with carbonated water as you saw towards the end of the video
I keep thinking that this drink would be the perfect place to infuse with marijuana (where permissible) . I think the flavor would play well with Gin. I couldn’t think of a more refreshing way to write off a night..
I've tried infusing Gin with CBD weed. It was horrendous 😅
Fabian Scherrer good to know
Surely you could isolate quinine from the bark, use the safe amount and just use that with your botanicals.
i'm always a safety last kind of guy so this appeals to me.
can you technically just make the bark and the water by itself? like a tea?
Would it be possible to use a dandelion root instead of cinchona bark? Dandelion roots are extremely bitter if you have ever tried to taste them.
Good morning friend!
I'm going thru super depressing feelings is there anything I can make at home to feel better ?
What was the bubbly water you added to the tonic quinine mix?
Should've turned a blacklight on, so we could see it glow :P
I'm going to make this anyway, I normally just drink fizzy water alone, but wanted to know if the flavour of the peels came thro
How about a low calorie version, e.g. with birch sugar
@5:05...huuuhhgggjhjhj perfect, that's perfect! 😂😂
Been drinking it since the mid 60s.
Where does one can get gentian root in a safe manner? Don't want to order from some odd website...
There isn't any kind of cinchona essence without the quinine?
How about making club soda??
After reading the description and hearing Glen speak that paragraph word for word, I am wondering if Glen uses a teleprompter...
Ha - it’s the other way around, the description is from Google transcribing my audio to text.
May we have the coarse salt in grams please?
