- We are making our own homemade tonic for one of our favourite drinks, Gin & Tonic.
We've found that the type of tonic used really makes a good Gin & Tonic. Jeff enjoyed one of the best G & T ever while on a trip to Edinburgh, Scotland where he was introduced to Fever Tree brand of tonic. Fever tree is quite pricey and not readily available, so we set off to make our own using a recipe that we came across.
TONIC SYRUP RECIPE
1/4 cup cinchona
1/4 cup citric acid
Peeled zest of 1 grapefruit, 3 limes, 3 lemons
1 tbsp lavender
6 cardamom pods
9 allspice berries
1/2 tsp salt
3 cups simple syrup (2 part sugar:1 part water)
GIN & TONIC RECIPE
1 oz tonic syrup
2 oz gin
3 oz club soda

I grew up on G&T, dad always gave me a sip when I was a kid. I grew up, my biggest complaint with commercial tonic water is it is sweet and it lacks the bitter bite that I remember as a kid. I have the bark, the herbs, the fruit, I need to pick up some lemon grass, but this is this weeks covid project. Tonic syrup. I just bought a highly recommended syrup, awful waste of money. Should have spent it on a bottle of gin. With luck, my concentrate before adding the simple syrup will bring the commercial stuff into the real world. But thank you, truly an excellent video!

I followed your video instructions and made some homemade Tonic Syrup. It turned out perfect, however, I have a question: I would like to make my own soda water using my Soda Stream. I will be carbonating the water in 1 quart bottles, and then add the Tonic Syrup to the bottles after carbonation, so my question is, "How much Tonic Syrup should I add to the one quart of soda water to be within safe limits as to the amount of quinine in the syrup.?"
Wow, good questions and good idea. I would assume it should be ready to mix with gin and ice. I believe in the video I used the 1,2, and 3 method. I x G, 2 x T and 3 x S. Make a smaller batch to test it. Good luck and let me know how it went! Cheers and thanks for watching.
I am brewing my first batch up, what's the issue with the dust? Why waste?
Hi William! Thanks for watching the video! I hope your batch turned out really good. I don't believe there are any concerns or issues with the dust, it was more of preventing any cloudiness or suspended particulates in the end product. Unless you have a better filtration system, it's easier to remove it at the get go. Cheers and enjoy your next G&T!
Too much quinine is bad. You can’t control how much goes into the mix if you use the dust.

How long will this last in the fridge?

The tartness of a lemon is citric acid. Fresh lemon juice is essentially only water and citric acid. The lemon makes it as it grows. There are some small levels of other compounds that develop in the lemon but it is mostly just citric acid. Since there is no fruit juice in a syrup like this you need to get the acidity for tartness from somewhere. There is some acid the peels but not enough to give you the tartness that you need for this kind of syrup.
So you showed making the sugar syrup but you didn't show if you are suppose to combine it with the tonic extract. Does it need to be combined warm, cold.....???
Also the recipe doesn't mention the sugar syrup either, you know you can edit the recipe and add the lemon grass and the instructions how to combine the sugar syrup don't you?
Other than those questions this looks like a great recipe for seasonal drinks in the cold and flu season.
You have some very good points and I do need to edit the formula to include lemon grass as you mentioned. I mixed everything while it was hot (warm). The recipe was really nice, we enjoyed it but now need to make more! Enjoy the season with a fine G&T, sound great! Thanks for watching and cheers!

I made a simple quinine tonic water extract on my channel just using grapefruit and lemon peelings. It was for the cold and flu season more so than for making G&T mixed drinks though. But I think the spruce tea extract I made worked a little better than the quinine extract. I was thinking about combing them in a future video for possibly an even more effective home remedy?

citrus peels are very delicate and temperature sensitive. Use a cold infusion method. You're pretty much destroying big part of what gives that "freshness" characteristic as well as many components.

Hold on. If cost is one of the main motivations here… it seems a little silly to leave that part out. Even if you ignore the time, materials, and the cost of soda water… you’re spending more to make it, than you are for the high end 4 packs of tonics. Soooo… Plus, not sure if I handed someone a brown GandT how they would react. How I would react. lol.
All of this seems like a terrible idea.
Well as they say, everyone is entitled to an opinion, and I respect yours. Making the tonic was purely for entertainment, but it did make some grand G&Ts. Thanks for watching!
This is NOT SAFE!!!!!!!! Way too much cinchona! DO NOT MAKE THIS if you're not sure it's safe for you and if you don't have any heart problems. Too much cinchona can cause heart palpitations and other serious issues. Most importantly, DO NOT SERVE THIS TO ANYONE YOU DON'T KNOW!!!!!!!
