My Tatay was from San Miguel Bulacan and I make sure evertime i visit Philippines i go to San Miguel because of the the masasarap n delicacies. The best ang Bulacan sa mga kakanin. But I never tried sabalangko at suman maruecos. For sure I will make these. Looks so delicious. What I miss tho is the Bulacan espasol na gawa raw sa gatas ng kalabaw. Sana I feature mo espasol n hiniwa hiwa ng square n maliliit. Salamat.

That's why i want to share some of kakanin recipe that my mom used to cooked when we were growing up. I think its pastillas you mean to say that made from gatas ng kalabaw. Kasi yung espasol is made from glutinous rice flour and coconut milk.
Macapuno is a type of coconut with soft and chewy flesh that are preserved in sweet syrup. I used bottled sweetened macapuno in this that i bought in Asian-Filipino store.

What’s another substitute for banana leaves? Can’t find that anywhere
You can use parchment paper if you can't find banana leaves but make sure to brush the surface with coconut oil to prevent the mixture from sticking.

No, you can't! Coconut is one important ingredients needed in making suman and other Filipino kakanin.
