Mushrooms, any and all are simply scrumptious to me! I love the king oyster variety but they can be hard to find. The Asian grocery that carries them is way across town but worth making the drive. That sammie with the best hummus looks awesome too.
I use dried Shitake mushrooms available in Waitrose, just give them a quick soak and they are ready to use. Great if you are pushed for time, rather than chopping and removing soil etc from fresh mushrooms. Also cheaper if you are into Shitake. I do use fresh ones but really like these. Not suitable for burgers but they'd be great in the bake. Mushrooms are very like meat especially the portobello variety, juicy, and full of b vitamins. I buy ready made mushroom burgers but I use the dried ones in casseroles, stir fries and on toasties or in pasta sauce. The pressing technique with a pan is interesting I'll try that to reduce liquid in fresh mushrooms.

Interesting fact 1: among the regularly available mushrooms in supermarkets, button mushrooms unjustly despised are younger versions of cremini mushroom -- think you know them as chestnuts mushroom and if they keep growing you get Portobello; who knew? Also rated 2 highest nutrient density, affordable also. Highest in western world; dried porcini. I mix them up. Other facts; the synergy effect. Using a variety of anything, not rigidly in same meal exponentially increases bioabsorption of nutrients. LASTLY (what a comment motor mouth I can become) -- and this has nothing to do with mushrooms -- I used to like a certain Lebanese restaurant which served aubergine steaks, still the meaty theme. 1 inch thick, salted over a colander for 1/2 hr perhaps; drain and rinse, pat dry. Aubergines as you guys know soak up oil and this improves texture and prevents that phenomenon. Grill or oven bake with some oil and Italian herbs and lemon juice. Who knew it would be so easy?? And what is more digestible and more easily assimilated by the body? short chain amino acids. The fetishism of protein is nothing short of a sham. Our breast milk is 80% carbohydrate. Our ATP, our main energy source, is converted from carbon, ie, carbohydrates and simple sugars. Mushrooms have a meat like texture and have glutamates that create an umami flavor in the food, which is what meat typically emits. So they are a good substitute. If you want something with more protein in it there are obviously tons of other vegan options, but its silly to think about macro nutrients, especially on a whole food plant based diet where you should be . getting everything you need. I could send you videos of fruitarian body builders, dont get lost in western dietary requirements as they got us as sick as we are in the first place.

We are primates and have our species specific diet just like everything else on this beautiful planet, nature has structure, we're no different.
