Westerners dont need to eat rice to appreciate dishes. Rice is just a habit and Economics. Filipinos eat rice because it cheap. Even in China, eating rice in expensive restaurants is frown upon. The rice is served when they almost ate all the food. And Chinese food 100 time more intense than Filipino food. But rice is not a must among the well to do.

all filipino food is salty and must be paired with rice so... all our foods rice is a must... and its also because rice makes you full and you dont have to eat that much with rice on your meal @@eduardochavacano

Asking the customers who are dinning to lick a plate was ULTRA Pretentious and rich Filipinos would most likely ask for the manager to give him some well deserved tongue lashing. The first part of the video, that was not lechon and the egg is not anything exotic. When a dish a hard boiled egg it is for the poor. And the noodle, that is just good old Vermicelli, known in the Philippines as Sotanghon and they import that from Indonesia or Malaysia via the island of Mindanao.
