    Nice chef! What’s the deal with the “mountain” in the center of that pan? Never understood why some pan’s are made that way. How might we avoid the chick skin getting soggy?

      If you fry, chicken skin will be crispy. If you are braising chicken with skin, it will always be soggy. Sometimes, i just remove it.
