I like the outdoor "camp" style ovens on legs, but I also LOOOVE my Tramontina brand enameled cast irom I got at Costco....made in China.

Chicken Scarp is a popular Italian dish which I’ve cooked a few times, I’ve always added black olives, a little oregano and/or thyme also adds to the overall flavour. Lucky Dawgs it seems like you have places there in Texas for Italian favorites. Since moving from NY down to St Mary's Georgia i haven't found any Italian specialty markets. Even in Jacksonville Florida which is a skip away there aren't any. I miss uncle Giuseppe's in Long Island. 😢

I'd like to have a Lodge "spider" style large frying pan........it has legs on it so you can put hot charcoals underneath....that's why they call it a spider. They don't manufacture them anymore so I would have to get a "retro" at a flea market.

Excellent recipe. I learned by watching my Dad and Mom cook( Dad and Grandpa taught Mom how to cook) . I got the amounts by guessing, cook books and You Tube now. I like to add pickled peppers instead or in addition( cherry peppers, pepper dew , pepperoncini( spelling?). Thighs are juicier than chicken breasts.
you can get both silicone and cloth handles for those frying pans.....also large "ears"...handles for both sides of a cooking sauce pan handles....they make a small one shaped more triangular for the off--side "ear" on the frying pans and a large rounder one for both sides of a large cooking pan...NOTE: DO NOT cook in the oven or range top with the silicone heat handles attached.

My friends mother was just an amazing cook, my mother, my aunts, they all used the same amounts when making meatballs and mixing. I think it has something to do with your hands. Skin. What ever your natural taste is, like a cannibal. lol It goes into what you are making. Just a theory. Also your timing. How long you shake a salt shaker in your head. I can smell the vinegar from here. I prefer reg white wine or red wine vinegar. You don't put hot Peppers?
